On top of your cake that’s a dome before you cut it down was that like cake pop dough?

Yup, it was my trimmings from leveling my layers, stacked on top and then a tiny bit of cake pop mixture to finish off the shape.

Did you use a 2" tall or 3" pan?

I like to use 3” tall pans. I find they make for a much more even bake and the tops are always pretty flat.
