  • Chicken Patiala Recipe
    Ingredients:
    For the Marinade:
    500g chicken, cut into pieces
    1 cup yogurt
    2 tbsp ginger-garlic paste
    1 tsp red chili powder
    1 tsp turmeric powder
    1 tsp garam masala
    Salt to taste
    Juice of 1 lemon
    For the Gravy:
    3 tbsp oil or ghee
    2 onions, finely chopped
    2 tomatoes, pureed
    1-2 green chilies, slit
    1/2 cup cream
    1/2 cup cashew nuts, blended into a paste
    1 tsp cumin seeds
    1 tsp coriander powder
    Fresh coriander leaves for garnish
    Instructions:
    1. Marinate the Chicken:
    In a bowl, mix yogurt, ginger-garlic paste, red chili powder, turmeric powder, garam masala, salt, and lemon juice.
    Add the chicken pieces and coat well.
    Cover and refrigerate for at least 2 hours (preferably overnight).
    2. Prepare the Gravy:
    Heat oil or ghee in a large pan. Add cumin seeds and let them splutter.
    Add chopped onions and sauté until golden brown.
    Stir in the tomato puree and cook until the oil separates.
    Add slit green chilies, coriander powder, and the marinated chicken. Cook on medium heat until the chicken is done.
    3. Finish the Dish:
    Stir in the cashew paste and cream. Mix well and simmer for a few minutes until the gravy thickens.
    Adjust salt and spice levels to taste.
    4. Serve:
    Garnish with fresh coriander leaves. Serve hot with naan or rice.
