    Hi Beth, made this recipe as a dessert for my party last Saturday. I had ten people coming over so I doubled the recipe. Topped it with the four red fruits jam from Le Pain Quotidien , pistachios, fresh blueberries, raspberries and a drizzle of honey. I wanted to report to you that it came out perfectly, and was lighter than all the other Panna Cottas I've had or made before. Thanks again for this amazing recipe.

    Hi Beth,
    I made your recipe today for a church Luncheon and it was a hit. I use coconut milk and top it off with dried fruits, honey, pistachios, strawberries, and raspberries with coconut shreds. Yum. It was delicious.

    Back again, as I have been craving this recipe again. I add slightly less sweetener and use non-dairy milk and eat it for breakfast! Love your recipes. They are clearly well-tested and always come out just right.

    In Malaysia assorted flavours agar agar are very common and usually we hv them as dessert , yummy !

    I love panna cotta so I really want to try this but I find Greek yoghurt a bit tart. Is the honey enough to sweeten the panna cotta (not necessarily to dessert sweetness, just not bitter)? Or should I / could I add more honey?

    The tip about the agar agar was great - I'd never heard that there was an alternative to gelatin. Also great to know that it sets up much faster than gelatin!

I too like to experiment with food and recipes! :D btw, here in Malaysia, we tend to have agar-agar produced in strings like figure, there are in powder form available, but can I also use the strings agar agar? Is it the same as gelatin sheets where you need to soak in water before cooking it on the stove? :)

      rainbowunicorn M Oh sure you could also use vanilla extract but add it to the mixture after mixing the yogurt. No need to heat it with the cream :) Enjoy!

    Beth, I really wanted to try this one out because my usual go-to panna cotta recipe just seems so gosh-darn rich. Somehow the consistency of this came out rather grainy. Could it be because my honey has crystallized? I mean I did heat it up in the pot as you mentioned, but perhaps after cooling, it returned to its crystallized texture?

    Fun fact- Agar-agar means Jelly in Bahasa Melayu/Malaysia (probably because it creates a jelly-like consistency like gelatin does :D)

    I live this!! Can you use regular yogurt instead of Greek or do you need the extra fat?

      I believe Greek yogurt is simply strained several times to reduce the water. This process is what gives Greek its thickness and great mouth-feel, not fat. I think I've heard Martha Stewart or maybe our Beth state that one can make Greek yogurt from normal yogurt with cheesecloth and time.
      I just Googled it and for one cup of Greek, you should start with two cups normal if you're not going to strain for more than 24hrs. The longer you strain, the more normal yogurt you must begin with (and of course the more fat unless you're using non-fat). Definitely Google it again and stick with one website's instructions.     Tip for condensation: put a layer of papertowel under the plastic wrap! That should help!

    The spoon you use in the first shot of the gelatin powder is from Sur la Table, non? They're called ice cream spoons I think. I have a set too because I love petite everything!

      Ka Wai Mok Yes you can. You can also use cream. Classic panna cotta (meaning cooked cream) is PURE double cream, sugar, vanilla and gelatin.

    We eat agar agar with lychees, peaches or any fruits of your choice for deserts. You can add colouring to agar agar if you wish to!
