Topped it with the four red fruits jam from Le Pain Quotidien , pistachios, fresh blueberries, raspberries and a drizzle of honey. I wanted to report to you that it came out perfectly, and was lighter than all the other Panna Cottas I've had or made before. Thanks again for this amazing recipe.

I love panna cotta so I really want to try this but I find Greek yoghurt a bit tart. Is the honey enough to sweeten the panna cotta (not necessarily to dessert sweetness, just not bitter)? Or should I / could I add more honey?
The tip about the agar agar was great - I'd never heard that there was an alternative to gelatin. Also great to know that it sets up much faster than gelatin!

Could it be because my honey has crystallized? I mean I did heat it up in the pot as you mentioned, but perhaps after cooling, it returned to its crystallized texture?
I believe Greek yogurt is simply strained several times to reduce the water. This process is what gives Greek its thickness and great mouth-feel, not fat. I think I've heard Martha Stewart or maybe our Beth state that one can make Greek yogurt from normal yogurt with cheesecloth and time. I just Googled it and for one cup of Greek, you should start with two cups normal if you're not going to strain for more than 24hrs. The longer you strain, the more normal yogurt you must begin with (and of course the more fat unless you're using non-fat). Definitely Google it again and stick with one website's instructions. Bon courage/bonne chance! 😸
The spoon you use in the first shot of the gelatin powder is from Sur la Table, non? They're called ice cream spoons I think. I have a set too because I love petite everything!

Susan Wang same happened with me when I poured my milk mixture then immediately it split. Became weird
Fun fact- Agar-agar means Jelly in Bahasa Melayu/Malaysia (probably because it creates a jelly-like consistency like gelatin does :D)

Ka Wai Mok Yes you can. You can also use cream. Classic panna cotta (meaning cooked cream) is PURE double cream, sugar, vanilla and gelatin.

We eat agar agar with lychees, peaches or any fruits of your choice for deserts. You can add colouring to agar agar if you wish to!
