Thanks for the great video. Can you strain out the seeds for people who don't like the seeds? Also if you want to use a mold how long do you cool the ganash for so you can use piping bag to fill the molds?
Yes, you can strain the seeds. the viscosity of the chocolate and the small seeds may make it a very tedious process but yes you can. I would strain BEFORE you temper the chocolate. Great questions. Thanks for asking
I have never used "double cream" but heavy whipping cream is whipping cream as far as I know. I do know there are some heavy creams containing greater fat content. Thanks for asking.

there are 2 different measurements for the rum..... at the start it says 1 Tbsp, when she actually adds the rum it says 1 tsp
I would stay with 1 Tablespoon as a teaspoon will not provide enough flavor. Happy Chocolate making.
