It felt less like an all out murder attempt(Think Beast Ganon and the things he did in other games) and more like a way to try and exhaust him and keep him busy while he prepared. To steal the complete Triforce. Also, remember. In that timeline he lost, was banished, and without dying or obtaining victory he had at Least several centuries to reflect on his decisions. Without his taste of victory from the Hero's Defeat Timeline, or unbridled hatred from watching his people be tortured and executed for a crime he had yet to commit, he instead grew into a wizened self reflective man who merely wanted to return things to how they were, but with him in charge. Also note that he didn't use magic to do battle, didn't kill when it wasn't necessary for his goals, and overall he had an air of chivalry in how he fought.
I wouldn't be surprised if he did go deaf because of any one of those incidents. Bombs going off in one's ear or being near loud collapsing structures or even excessive screaming can mess someone up

I think I finally found a reasonable explanation for this. This is just the morning routine for ganondorf, whose wearing a night robe, and link, whose used to being called hero of time out of ganondorf's habit. Granted, this would imply that he's in his night robes during the entirety of wind waker, but considering how long its been, it could be his last outfit that's not shredded due to becoming a gaint pig demon... or this is night one of smash ultimate and links gotten good with him and thus is now cool with this ganondorf, at least to the point of being casual around him.
Just imagine, in the heat of battle, you have a serious face, and you talk in sign language like: “You are a disgrace to our kind” that would be funny.
It seems like fighting might be a bit difficult for both of them after this wholesome encounter. it would be a bit weird for them. so they instead make peace, and go over different signs so ganandorf can test his fluency, and link gets the chance to actually talk with someone.

This makes all other encounters Link has with NPCs more interesting... Either every Hylian is fluent in Sign or there are moments where its like... "Hey there, You can store your horse here at the Stables. Blah blah blah blah" and Link just stands there thinking... "Goddess, hope their are not explaining how a Stable works..." Maybe even hammering A to continue

For the wind waker gdorf I’m only guessing that either artist’s favorite one or that version is the less angry therefore the more inclined to talk

I think I finally found a reasonable explanation for this. This is just the morning routine for ganondorf, whose wearing a night robe, and link, whose used to being called hero of time out of ganondorf's habit. Granted, this would imply that he's in his night robes during the entirety of wind waker, but considering how long its been, it could be his last outfit that's not shredded due to becoming a gaint pig demon... or this is night one of smash ultimate and links gotten good with him and thus is now cool with this ganondorf, at least to the point of being casual around him.
Then he won't be able to hear that amazing tune when he gets something cool
Would explain why it no longer appears in BOTW when you open chests, not much point now.

It seems like fighting might be a bit difficult for both of them after this wholesome encounter. it would be a bit weird for them. so they instead make peace, and go over different signs so ganandorf can test his fluency, and link gets the chance to actually talk with someone.

As someone that's learned sign language in order to communicate better with a certain person, makes me happy to see sign language getting more recognition through such a famous game. Even if it is from just the fanwork
yeah, its nice seeing recognition... honestly the fanwork may be better... i dont know how good nintendo would do deafness and its culture in such a complex game (i started learning as a way to get around some disadvantages i get with communication from autism)
