    Suggestion: Take cut in half lemons dipped in salt and use them to scrub the sides of your copper pan to improve color and remove stains. Much cheaper than copper cleaner. Great recipe.

      I think he likes to leave his copper natural; I prefer it since otherwise it would require acquiring and managing staff which is more stressful than using one’s things and enjoying them.

    Omg I JUST made this from your book 2 weekends ago! It was my first time making curd and meringuenof any kind and it went perfect with your clear directions! The result was a delight for the senses - the curd, sans cardamom, was a touch too tart for my own personal taste but the meringue was SO GOOD with swirls of strawberry fruit spread! Now I want to make it for my sister's next visit!

    What a lovely pie! I have sucked at making good pie crusts, but maybe I'll try again. Fun fact: Corn starch is often used to create the sound of snow crunching under one's feet.

    I use a little bit of apple cider vinegar in my pie crust as well. It helps with breaking down the fats and making it super crisp and flaky

      A recipe that I sometimes used for a crust has vinegar and also an egg. It's called never fail crust, and it pretty much is. It is always tender and flaky.

      The former Broadway Deli in Santa Monica had a fabulous apple pie recipe that used ground almonds in the crust. It was wonderful.

    Delicious looking recipe! It always makes me smile when you voice your opinion on cornstarch. I actually like the feel, to the point where I use my finger to mix it with water when making a slurry. When I was taking a college course in early childhood ed, we would add cornstarch to the paints for finger painting.

      In the UK we call it 'Cornflour'.... I guess (and hope) it's the same as Cornstarch in the US.

    I feel dumb even giving tips (subservient?) but... when making pie crust or pastry dough I've found using 2 bench scrapers to cut the butter into the dough works wonders. Just mix everything on your counter with the bench scrapers. I have very warm hands that melt butter like fire. If that sounds like you, try this tip.

    There are certain items which I love to eat, but never thought to make them myself, so, when I searched for 'eclairs preppy kitchen', or, 'crescent roll preppy kitchen', or, 'lemon pie preppy kitchen'.....there you were, with your delicious recipes to offer.

    My grandma used to make a raspberry jam that was incredible! Her secret, she told me, was that she added drained pineapple tidbits to it, because the berries cooked away to almost nothing, and the pineapple gave it a bit of texture. I think it would go superbly with this pie.

      Keto doesn’t have cheat days. Unless you’re well adapted and have been in ketosis for months or even years, you’re basically starting over as soon as you have carbs.

    I usually do not like meringue. I make lemon pie without it. But I have never had Swiss Meringue. So I will give it a try. I'll get back to you and let you know if you have turned me into a meringue lover.😁

    Never thought of swirling jam into a meringue before. Anyone who loves lemon deserts but find the tartness a little lacking, add a touch of cream of tartar. It'll boost the tartness easily. Don't add much though, go a quarter teaspoon at taste first.

    Hi John! 🥰 did you get around to making the Strawberry Curd/Custard? Also John I had to buy a Convection Oven and counter top Commercial blackstone My Landlord came by 2 days before my Birthday which is june 24th and said the gas would be off until mid October I bought a Convection oven and Countertop Blackstone, and My Landlord gave us a two burner hotplate to cook on it's driving me insane but the items I purchased works for now and I have seen this Recipe in Your Cook Book I am gonna try and make this in a Convection oven Wish me Luck! Thanks again for another Outstanding dessert!.

    I’m wondering if you could turn this into an eclair? Take the lemon custard and mix it with whipped cream. Kinda like a lemon diplomat cream. Along with a toasted Swiss meringue buttercream frosting, or a white chocolate ganache. It’s just an idea but would be awesome if you gave it a shot?

    So hard to to get the meringue to thicken up with a had mixer blended for about 20 min kinda fluffy but still melts down like chunky ice cream any advice what I can add or do differently followed step by step

    At 10:01 you said place the wrap on the meringue and place in the fridge. I am sure you meant place the wrap on the filling and place in the fridge.
