I feel dumb even giving tips (subservient?) but... when making pie crust or pastry dough I've found using 2 bench scrapers to cut the butter into the dough works wonders. Just mix everything on your counter with the bench scrapers. I have very warm hands that melt butter like fire. If that sounds like you, try this tip. 🤚🔥✋😂

My grandma used to make a raspberry jam that was incredible! Her secret, she told me, was that she added drained pineapple tidbits to it, because the berries cooked away to almost nothing, and the pineapple gave it a bit of texture. I think it would go superbly with this pie.

Keto doesn’t have cheat days. Unless you’re well adapted and have been in ketosis for months or even years, you’re basically starting over as soon as you have carbs.

I usually do not like meringue. I make lemon pie without it. But I have never had Swiss Meringue. So I will give it a try. I'll get back to you and let you know if you have turned me into a meringue lover.😁
Never thought of swirling jam into a meringue before. Anyone who loves lemon deserts but find the tartness a little lacking, add a touch of cream of tartar. It'll boost the tartness easily. Don't add much though, go a quarter teaspoon at taste first.

Also John I had to buy a Convection Oven and counter top Commercial blackstone My Landlord came by 2 days before my Birthday which is june 24th and said the gas would be off until mid October I bought a Convection oven and Countertop Blackstone, and My Landlord gave us a two burner hotplate to cook on it's driving me insane but the items I purchased works for now and I have seen this Recipe in Your Cook Book I am gonna try and make this in a Convection oven Wish me Luck! I’m wondering if you could turn this into an eclair? Take the lemon custard and mix it with whipped cream. Kinda like a lemon diplomat cream. Along with a toasted Swiss meringue buttercream frosting, or a white chocolate ganache. It’s just an idea but would be awesome if you gave it a shot?

So hard to to get the meringue to thicken up with a had mixer blended for about 20 min kinda fluffy but still melts down like chunky ice cream any advice what I can add or do differently followed step by step

I use a little bit of apple cider vinegar in my pie crust as well. It helps with breaking down the fats and making it super crisp and flaky

In the UK we call it 'Cornflour'.... I guess (and hope) it's the same as Cornstarch in the US.
