    To paraphrase Marco's words back when he was still a two-star chef at Harveys:
    "We have it on the menu as simply, Baked Pig's Trotter - Pierre Koffman, because it's his dish, so why should I pretend that it's mine?"

      Yes, Marco was immature, a tortured artist if you would. But he has changed, mellowed, and become a kind and wise old man. Life is a journey.

    I agree with Pierre Kaufman outlook on life,one can only be successful doing a metier( proffetion/ job) if one enjoys it.I also praise his cooking which is not too complicated,has not got two hands of ingredients in.I watch some Chefs on TV and am amazed the amount of ingredients used,how can any palate discern taste in a dish with 20 ingredientsThey all when tasting go Mm Mm Mm. this turns me off.Monsieur Kaufman CHAPEAUX, Rene born in Paris 1930

    The word chef is overused in this world... I hate the word chef but, Pierre Koffmann is what you call a "chef"

      What are you on about, chef means director of kitchen, if youre the director of a kitchen youre a chef. I dont know how you can overuse that word.

      @@narvul being a chef is not a big title, everyone in the brigade that cooks is a chef except the porter, starting from commis to the top all of them are chefs.

    Is his version of pig trotters served anywhere 2022? I have had stuffed pig trotters at Au Pied de Cochon in Paris- excellent but a more "strict" version. Pierres and Marcos is totally flipped out (in a very good way!)

      Probably have to make it yourself, i think the recipe is in one of Marcos books and I also saw it online somewhere.

      I know, right? I'm still fascinated by the dish, though, after seeing the video that shows when Marco cooked it for Raymond Blanc. :D Perhaps, it could actually be very tasty with the right kind and amount of sauce, along with a good side.

      Angela Netherton, it’s clean, yummy, low in fat, contains a lot of amino acids, and full of healthy collagen which is great for your joints and skin. It’s considered a superfood.

      @@salazarklopp3732 Marco proved that Michelin stars become worthless, once you achieve three. If you climb to the summit of Mt. Everest, do you need to prove that you did it, by doing it again? No. Also, you actually like Gordon Ramsay? That shows that you lack taste, and no, I'm not talking about his cooking.

      @@CooManTunes Marco proved they were worthless ? No he stated that Michelin had lost there integrity by giving the stars away easily now a days. Koffman got his three stars before Marco. Where did I say I liked Gordon Ramsey ? Learn to read you idiot. I literally stated he taught two other chefs who arnt just successful but also got 3 stars in Michelin so he’s clearly an amazing chef himself and a good teacher. I repeat get in the bin..
