I like to take steak in a cast-iron skillet and cook it atop the stove. Heavily seasoned with salt and pepper beforehand, almost like a dry rub just with those two seasonings (both sides.) Then use some butter in the skillet and sear it on medium high heat for about 3 minutes on both sides, then transfer it to the oven to finish.
