IDK... Probably fears mad cow's disease. As long as it's alive (or dead), the disease can spread... But when cooked, the disease is dead. Or probably it's just being an unsanitary animal, Sheldon is a germaphobe.
Their fear of cows is...fully understandable - mean brutes (the cows, not the Coopers).

Not going to happen, she's too smart, and so is Georgie, and they can drag down the Police/Sheriff for corruption and taking bribes - BUT BUT BUT what may happen is that they catch wind of a raid and shut it down themselves and then take Meemaw's money and launder it and use it to jumpstart Georgie's first tire store business "DR. TIRE" and the rest is history.
