@Soldagg I don't find it strange, just interesting. Like when you look at almost any culture, during some period of time they made a form of empanada. It's fun seeing how many similarities there can be between different parts of the world.
In the 19th century, millions of Indians were sent to East Africa as British indentured labourers to build the Kenya-Uganda railway, they settled throughout East Africa and their descendants live there today-- this chapati is an example of cultural diffusion between Ugandan and Indian foods. :-)
"Rolex" is basically an omelette in a paratha. There's nothing really Ugandan about this. It's just a recipe popular in Uganda. Reading some of the comments here, it seems these egg rolls already exists in South Asia, so the assembly is not unique. It's interesting to see how widespread Indian influence is due to the history of British Indian migrants, e.g. curry chicken, sambusa, roti canai, dejaaj, chicken tikka masala, currywurst, etc.
I’m a 28yo born in England but my parents were both from Uganda. This reminded me of them and bought back sweet memories of when they were alive. Thanks Emmy! ☺️

@@redakacloud Except finding those recipes were only east because those foods weren't really so Native but became necessities when the invaders came and much later gave them wheat flour, sugar and lard and they figured out fry bread to help them survive. But it was the begging of the Natives becoming obese and sick with things like diabetes and heart issues.

When I was growing up, no one had a cutting board, so I learned to cut everything up in my hand like that, even cabbage. I can remember wanting a cutting board so bad when i was watching TV chefs in the 1990's!

A very basic four and water dough. In Malaysia, this gives you roti canai- or roti prata in Singapore. Only with roti, you flip the dough and stretch it out thin so that a ball the size of your fist stretches out to the size of a bath towel. Traditionally, ghee is used instead of oil. Roti can also be filled with a variety of ingredients: telur (egg), bawang (onion), bawang putih (garlic), sardin (sardines), cokolat (chocolate/Nutella), kelapa (grated fresh coconut), and so on. Savoury ones are accompanied by little dishes of various curry sauces, the sweet ones with sweetened condensed milk, honey, and/or fruit jam.
To mix doughs I use the handle of the wooden spoon. It mixes easily and it’s so easy to get the dough off, and the plastic scraper is perfect for using in a bowl, and the metal one is best on the counter... which is why it’s AKA a ‘bench knife’. The handle tip came from Stev’s Artisan Bread channel.
Oh my gosh Emmy! I was so excited to see this recipe on your show!! I lived in Uganda for six months and ate a rolex *at least* 3 times a week. A hot rolex with a cold Mirinda is the absolute best!! Sometimes I would have chapat that had shredded carrot in the dough, which was also very good. Maybe something to try :)
This was my high school lunch of years 😁... I got so sick of it the teenage me rebelled and refused to eat it. Its been over 10 years and I think I'll make it for dinner tonight.
This looks like a KATHI Roll from Kolkata 😂. The chapati is called laccha paratha in kolkata and Kerela porontha in Kerela. Funny so many similarities ❤️

That cross hatch and cut in the hand method is universal. I’ve seen it in SE Asia and Brazil as well. I’ve watched dozens of women prepping for the mid day meal watching TV and cutting like that. Especially with soft foods like eggs and potatoes.

Layered chapati is called Malabari parota in India. Btw there's lot of Indian influences in east African cuisine because of thousands of Indian indentured laborers who went there to work during British raj
A variation on the rolex has fresh tomato in the middle (before you roll it) and the addition of chili salt. That is how I have seen it served. Just in case you were wondering.

I started trying her recipes after I followed her cooking tutorial for the jiggly cake.. I made it and it was amazing!The last five dishes she’s made, I’ve made them as a break from online classes. . . And they’ve all been worth it!
My mom used to make something similar for me to take for lunch at school..Only, she used to put the roti on the uncooked side of the omlette, when one side got nearly cooked, then flipped the whole thing and cooked the other side. It made the omlette to stick to the roti later, and didn't unfold and separate easily in the lunchbox..
15 Years ago In tunesia (mahdia) i used to eat chapati with scrumbled egg, chives and tuna (out of a can) and of course harrisa paste. I Was looking for a very long time for a recipe like this. Definitly gonna try it. Tanks for sharing it with us
Thank you for different techniques for chapati. Mine come out very solid and I'll try different ways of rolling them to see if I get different textures. This is a great breakfast or lunch recipe.
I never knew this was an actual thing, but I would have omelette 'roll's wrapped in a paratha (which this chapati essentially is due to the layers and oil) or a roti with mayo and ketchup 😍😍 for breakfast in pakistan

We have same or similar thing in India as well, its called Frankie or Kati Roll over here except the Omelet is made directly over the Chapati. It can have variety of stuffing in it as well like Paneer, minced or fired chicken, mashed potatoes, mushroom, Kababs, loaded with cheese, spices and vegs.
Yum! We do this with tortillas. We mix up scrambled eggs with tomatoes, onions, mushrooms sometimes, spinach.... Pour it into a griddle and then place a homemade tortilla on top then roll it up. It's amazing.
Hi Emmy! I loved this recipe, and got me hungry. I'd love to see you making Baleadas, a traditional dish from Honduras, very distinctive and delicious! The dough is similar to this one with the difference of baking soda or Royal... Served with fried beans, eggs, cheese, buttermilk and sometimes avocado. Love you!! Blessings!!! ❤️
Hi Emmy; This recipe reminded me of a Moon Cake recipe I watched on RUclips. I believe it was a Korean moon cake. It had 2 different layers of dough 1 mixed with oil and the other mixed with water. They were layered like a stack of tortillas or chapati then wrapped around the filling. It looked almost like a rose after it baked.

We use the dough scrapers for filing masa in tamales but out we got from cutting parts of a Folgers container

We have same or similar thing in India as well, its called Frankie or Kati Roll over here except the Omelet is made directly over the Chapati. It can have variety of stuffing in it as well like Paneer, minced or fired chicken, mashed potatoes, mushroom, Kababs, loaded with cheese, spices and vegs.

Yum! We do this with tortillas. We mix up scrambled eggs with tomatoes, onions, mushrooms sometimes, spinach.... Pour it into a griddle and then place a homemade tortilla on top then roll it up. It's amazing.

The dough is similar to this one with the difference of baking soda or Royal... Served with fried beans, eggs, cheese, buttermilk and sometimes avocado.

Hi Emmy; This recipe reminded me of a Moon Cake recipe I watched on RUclips. I believe it was a Korean moon cake. It had 2 different layers of dough 1 mixed with oil and the other mixed with water. They were layered like a stack of tortillas or chapati then wrapped around the filling. It looked almost like a rose after it baked.
I had plenty of chapati when we visited Zanzibar a few years ago. It's really good! I should make some!
I don't think you need to add sugar in the chapati but you did a great job making it 👏 👍
