  • On this video, I smoked up some delicious Texas style half chickens on my Yoder YS640 pellet smoker. I used 2 really tasty rubs. The first rub I used was from R Butts R Smokin and the second rub was from JP BBQ. I also applied BBQ sauce fro. Our House BBQ and a sauce also made by JP BBQ.

    When I was younger I used to split my whole chickens before smoking. Now I just smoke em whole. Reason is I use the whole smoked carcass to make soup stock for Gumbo. Texas.

    Joe, thanks for showing all the prep. I was always wondering what I was doing wrong when spatch-cocking a bird. The knife scoring on the underside breast bone was the secret. I was pressing the crap out of the bird before without cracking it in half. Better late than never right? Your birds look perfect. Beautiful chicken.

      Thanks Carl, I used the Pitboss competition blend of pellets. I usually use B&B but I was all out and Walmart sold these. Really good flavor. 👍🏼

    Really good video. Just curious, if you cook the thigh to 170 what would the breast meat temp be? I would think it would be at least 170 which might make it dry especially with no brining. I like to quarter my chicken so I can give the leg/thigh quarter a head start on the grill and put the breast on later so they don’t overcook.

      Hello Wayne, brining is definitely they way to go to keep the entire chicken juicy. I try to keep the breast on the cool side of the grill to keep them from drying up. The breast were actually 170 as well, still really juicy. I let it sit for a little bit too. Thanks for watching.👍🏼

    The tournament cooks, are they allowed to spatchcock cook a chicken and then cut in half after the cook is done to avoid the skin rising issue? I know nothing about competition rules and regulations. Great comparison video Joe.

    How often do you spritz the chicken?

      I only started to spritz the last 30 minutes of the cook. Once the bark is set and it looks dry is when you can start to spritz with the butter spray. Spritzing too soon will take the rub right off. 👍🏼 Thanks for watching.🤘

    Is it just me or do you have to smoke chicken at a higher temperature? Sometimes I'm experiencing the chicken looking done and with a good smoke color on the chicken but the skin feels tough and rubbery🤔please let me know

    In taste testing you should try #1 v #2, pick a winner, then try #3 v#4, pick a winner and finally try winner v winner for a final winner.

    why is it so hard to get a good smoke ring on chicken? noticed it really only shows up in the thigh. probably something to do with the pigmentation.

      That and the meat is really dense and hard to penetrate. Great question!🤘

      @@SmokinJoesPitBBQ thanks for the response. Little follow up, i just finished a 4 1/2 hour cook with similar temp ranges on two spachcocked chickens on a bullet style smoker. Used briquettes and wood chunk as fuel and still no smoke ring. 'Bout to leave that measure of quality behind when it comes to poultry.     Pretty simple to get your hand under that skin and put some rub on the meat, instead of just on the skin. JS... still good looking chicken nonetheless.

      @@SmokinJoesPitBBQ it's just not a small fortune. It's the space required. I have been following spike brewing and they are coming out with ebiab system late spring. If the reviews are what I think they will be I will get it in the fall. Just in time for football. Fresh beer, charcoal fired pizza and bbq. Yeah , baby.
