    सत्तू पराठा के लिए सामग्री:
    पराठा आटा के लिए:
    * 1 1/2 कप गेहूं का आटा
    * 1 चम्मच नमक
    *1/2 चम्मच कलौंजी
    * 1 चम्मच अजवायन
    * पानी (आवश्यकतानुसार)
    सत्तू भरावन के लिए:
    * 1 कप सत्तू (भुने हुए चने का आटा)
    * 1/2 प्याज, बारीक कटा हुआ
    * 2-3 हरी मिर्च, बारीक कटी हुई
    * 1 इंच अदरक, कद्दूकस किया हुआ
    * 4-5 लहसुन की कलियां, बारीक कटी हुई
    * 2-3 आम का आचार
    * 3 चम्मच आम के आचार का सरसों का तेल
    * 1/2 चम्मच नींबू का रस या 1 चम्मच अमचूर पाउडर
    * 2-3 चम्मच हरा धनिया, बारीक कटा हुआ
    * नमक स्वादानुसार(काला नमक और सफ़ेद नमक)
    पकाने के लिए:
    * घी या तेल (तलने के लिए)

    Ingredients for Sattu Paratha:
    For the Paratha Dough:
    * 1 1/2 cup wheat flour
    * 1 teaspoon salt
    * 1/2 teaspoon nigella seeds (kalonji)
    * 1 teaspoon carom seeds (ajwain)
    * Water (as needed)
    For the Sattu Filling:
    * 1 cup sattu (roasted gram flour)
    * 1/2 onion, finely chopped
    * 2-3 green chilies, finely chopped
    * 1 inch ginger, grated
    * 4-5 garlic cloves, finely chopped
    * 2-3 pieces of mango pickle
    * 3 teaspoons mustard oil from the mango pickle
    * 1/2 teaspoon lemon juice or 1 teaspoon dried mango powder (amchur)
    * 2-3 teaspoons fresh coriander leaves, finely chopped
    * Salt to taste (both black salt and white salt)
    For Cooking:
    * Ghee or oil (for frying)

    Method:
    Prepare the Dough:
    In a large mixing bowl, combine wheat flour, salt, nigella seeds (kalonji), and carom seeds (ajwain).
    Gradually add water and knead the mixture into a smooth, pliable dough.
    Cover the dough with a damp cloth and let it rest for 20-30 minutes.
    Prepare the Sattu Filling:
    In a mixing bowl, combine sattu, finely chopped onion, green chilies, grated ginger, and finely chopped garlic.
    Add mashed mango pickle pieces and mustard oil from the mango pickle.
    Add lemon juice or dried mango powder (amchur), fresh coriander leaves, and salt (both black salt and white salt) to taste.
    Mix all the ingredients well to form a cohesive filling. The mixture should be moist but not too wet. If it feels too dry, add a little water or mustard oil to adjust the consistency.
    Assemble the Paratha:
    Divide the rested dough into equal-sized balls.
    Roll each ball into a small circle (about 4 inches in diameter) on a floured surface.
    Place 2-3 tablespoons of the sattu filling in the center of the rolled dough circle.
    Bring the edges of the dough together to seal the filling inside, forming a stuffed dough ball.
    Gently flatten the stuffed dough ball and roll it out again into a circle (about 6-7 inches in diameter). Be gentle to avoid tearing the dough and spilling the filling.
    Cook the Paratha:
    Heat a tawa or flat skillet over medium heat.
    Place the rolled paratha on the hot tawa.
    Cook for about 1-2 minutes on one side, until small bubbles start to appear.
    Flip the paratha and apply ghee or oil on the cooked side.
    Flip again and apply ghee or oil on the other side as well.
    Cook until both sides are golden brown and crispy, pressing gently with a spatula to ensure even cooking.
    Repeat the process with the remaining dough and filling.
    Serve:
    Serve the hot Sattu Parathas with yogurt, pickle, or any chutney of your choice.
