Take Your Pasta Salad Up A Notch with Shrimp Pasta Salad

- A quick and easy summer salad, shrimp pasta salad comes together quickly and is the perfect pairing for your next cookout (or anytime!).

Ingredients
8 oz elbow macaroni noodles
4 stalks celery, chopped small (110g/about 1 cup chopped celery)
½ red or green bell pepper, diced, seeds removed (85g/approximately ⅔ cup)
¼ small onion, diced (105g/approximately ¾ cup)
2 cups small salad shrimp, cooked¹ (260g)
For Dressing
1 cup mayonnaise (230g)
2 Tablespoons sour cream
2 teaspoons distilled white vinegar
1 ½ teaspoons granulated sugar
¾ teaspoon celery seed
¼ teaspoon ground mustard
¼ teaspoon salt, plus more to taste (I typically need a heaping ¼ teaspoon)
¼ teaspoon ground black pepper
Instructions

00:26 Cook macaroni noodles al-dente according to package instructions. Drain and rinse under cool water, drain again and transfer to a large bowl.
01:05 Add celery, pepper, onion, and shrimp and stir to combine.
02:36 In a separate bowl, whisk together dressing ingredients (mayonnaise, sour cream, vinegar, sugar, celery seed, ground mustard, salt, and black pepper). Taste test and add more salt or pepper as needed.
03:19 Pour dressing over macaroni mixture and stir well until all ingredients are coated with dressing. Cover shrimp macaroni salad and refrigerate at least one hour (preferably overnight) for the flavor to fully develop before serving. Always stir before serving.
Notes
¹Shrimp
I am often able to find cooked small “salad” shrimp in the frozen section. Typically I toss these right into the salad frozen and when I go to serve the next day the shrimp has thawed and I just need to stir before serving. If you choose to thaw the shrimp first, do not drain. Alternatively you may cook/steam or use larger cooked shrimp, just coarsely chop the shrimp into small pieces. When my grandmother makes this recipe, she just uses a single (undrained) tin of tiny shrimp.
²Storing
Store shrimp pasta salad in an airtight container in the refrigerator for up to 3 days. For probably obvious reasons, this salad does not do well in the heat so I recommend keeping chilled or serving on ice for cook-outs etc.

Coincidentally, I made this yesterday. Pretty much the same recipe as yours except I used shell pasta, because seafood. I also added Old Bay seasoning (I use it a lot in seafood dishes), chopped fresh parsley and dill.

I add a splash of dill pickle juice and grated dill pickles. Also chopped boiled eggs. Instead of onions I add chopped chives. After 60 years of rinsing and draining I read to not rinse it and your salad dressing won't soak in. I constantly had to add more dressing. It might be best to undercook it a bit because if you don't rinse it it may continue cooking as it cools.

@@SugarSpunRun ,next time you make it,try the sea shells it holds the dressing well👍👊,I also don't go heavy on the onions and use chives for color and a mild onion so as not to over power with onion,some onions are very strong.👍👊😜

This is very similar to my memeres recipe except we add some flaked crab meat to the Mayo dressing it just adds a little more to it but everything else is exactly the same, I've made it both ways with and without the crab meat and it's great both ways but the crab just adds that extra something special that I really like and really reminds me of my memere 💖

Mom made her scrumptious elbow shrimp salad, I watched her throw 2 gether the ingredients 4 her sauce but never really lept track of what.
Half in half or cream if she had it, sweetener-sugar, salt & pepper, white vingar, garlic, onion & mustard powders . Never used lemon juice but I wanted 2 try as a option 2 your recipe, I really enjoy pasta & potato salads 4 summer dishes. Yours w/my modifications tasted wonderfully scrumptious! Thanks

Good steps but i prefer steaming my shrimp then added then frozen I think it would water down the dressing👍👍
Steaming works, but this recipe actually works super well with frozen shrimp. I actually recommend that if you thaw them first, you DON'T drain them before adding them. You can read more about this in the actual post 😊

Skip the ground mustard and add a third cup or so of Maille Dijon which chopped tarragon

Do you have to put in the peppers, and raw onions? I'd use onion powder, and can't eat peppers.
You can leave them out, it will just change the flavor. :)
