    I noticed when not parboiled. All of the scum comes out when cooking with coconut juice. Is it ok to parboil before marinating?

      Yes, absolutely. The scum doesn’t bother me so I skip that step.

      I've never made it with beef, but I don't see why not! You can also make it with catfish. ☺️

    Why some people quick boil and rinse the pork first and some don't?

      It's personal preference. Some people boil the pork to remove impurities and scum. Some say it tastes more "clean" and less "porky" whdn they quick boil it but I don't notice a difference and I don't mind the scum 😉

      This recipe is suon ram man which is a braised spare rib. Even though the title says thit kho, that just means braised meat. The recipe I think you’re looking for is just called thit kho, which is braised pork belly and boiled eggs. I can see why there was a mix up
