This was my first time ever smoking beef shanks and it will not be the last time. The flavor is so good that nothing can compare to the rich and gelatinous flavor of a beef shank. This is a must try recipe.

    Great timing brother. I have an elk shank I'm getting into today, I'm braising some of it today, the lower shank, but I can't wait to see what you're up to here; the hard part for me is adjusting the temps for game meat.

    Another winning cook, right there. Another perfect pairing with those beef shanks would be some mashed potatoes, beef gravy, and some asparagus spears. The tacos were a good call too. Cheers, Joe! ✌️

    Thank you Joe will definitely try this. I know this is a BBQ and smoking channel but this also looks like a good cut of meat to smother down in a brown onion gravy with mashed potatoes and a veggie side dish.

    Never heard of beef shanks. I remember Granny Moses used to cook opossum shanks.

    Wow that is a cut I have never seen before. We have our own beef butchered but I have never been offered that option. I will have to ask about that, but meanwhile I went to Portar Road and was shocked to see that a 5# Shank was only $40 👍👍 Looks great Joe!

    good video Joe that meat is very rich like ox tails meat. I use that kinda meat to flavor my greens and veggies and

    I recently smoked a brisket from Porter Road; made burnt ends from it as well...👍. Their dry-aged beef has great flavor. Compared to a wagyu brisket I did using the same seasoning, Porter Road's dry-aged brisket was better.

    I am able to find whole beef shank here in the Middle East more often than I can find brisket. I don't French it but do remove all the silver skin. If not whole, I will get it sliced about 2 inches thick then tie with butchers' string and make smoked osso buco. It needs a good braise after the smoke. I have been waiting for someone to put this on YT. Thanks for a great cook of an under rated cut of meat. lamb shank is great smoked as well.

      @@SmokinJoesPitBBQ No need to trim the silver skin from lamb shank. It will dissolve. I would love to see what you think. also, for great pulled lamb, smoke a whole lamb shoulder.

    Great cook! I love cooking a cut of meat with a bone, then when you make tacos out of it it’s on a whole other level! I’m gonna visit El Paso soon and I’m gonna need to try Mom’s Hot Sauce.

    I'm going to have to get a couple of those. They would make great BBQ beef sandwiches on Texas Toast with some hot mustard cole slaw. I have a bunch of beef tallow left over from my 21# brisket cook. Brisket, too.

    The reason we don't use beef shank more in BBQ is it is very prone to taste like liver. No one ever says that in these videos. If that's your thing cool, if not... yea... Looks cool doesn't taste great.
