  • How to make Texas Style Beef Ribs (with a little sauce) and a great all-purpose rub from Texas Sausage Company Texashotsausage.com/ which is the way I like them! The Backwoods Smoker Chubby 3400 www.backwoods-smoker.com rocked this cook! I ran the pit at 225ºF using Kingsford "blue-bag" with a little hickory added for smoke. The Beef Ribs turned out great! Tender and juicy, just the way I like them! Texas Beef Ribs!

      Minh N And that speaks volumes on how great the actual cooking, spicing, etc., really is. If you have to cover up your whole cook with talking constantly and talking up how great your stuff is; then it’s not anything I care to have.

    I'm jealous of those short ribs bro!!! They were HUGE compared to the short ribs I made a video of recently.     I just had short ribs for the first time the other day and I feel like I’ve missed something amazing my whole life! I’m in love with them!! Got them locally from a farm that raises 1/2 wagyu 1/2 black angus cows. Soooo rich!

    I definitely NEED to upgrade to a better smoker. I am using one of the basic $40 Brinkman smokers… although it does do the job, the size of meat chunks it can accommodate is somewhat limiting, and also it generates a lot of smoke. Oh, and my ex-wife lost the wire racks along with the bowls for the charcoal and water, so I have been half-assing it with some generic made in China stainless steel bowls and some wire racks that were NOT designed for the smoker. Looking into the Backwoods Smoker offerings, thanks for the tips! And EXCELLENT VIDEO! 😎🤙🏻💞🥩

    For me, it's the chef's privilege - whether to sauce or not. I prefer saucing mine while cooking to help it caramelize. Great job Chef Greg! Those ribs have inspired me to get some beef ribs (which I also love). :-)

    Any thing i put on the grill , i pat dry and use butter or margarine all over it. then the rub> I'am also using peach jelly on meats and things LOTS MORE too ! and in my hot sauces YUM

    Never done beef ribs in my smoker and now I'm excited to get them done. You mentioned you had it at 250 for temp but in the description it shows 225. What is the ideal temp to try and maintain for the rack of ribs?

    Same debate with pork ribs concerning whether or not to marinade, the amount of seasoning and the need for sauce. I say try all options at least once, and to sorta quote Sam, never cook the same thing the same way all the time. But personally I love a good smothering of sauce on any rib for that sweet sticky glistening coating.
    By the way, that moustache is getting fancier by the week, looking good!

    As always I love your videos.
    I wanted to get your opinion on doing some brisket and pulled pork. I am newer to smoking and was wondering do you recommend a more hot and fast approach or low and slow? Or do you have a preference on a set temperature for those proteins?

      Hot and fast is definitely convenient, but personally, I think low and slow still produces better BBQ.
