  • Roti means bread in Malay. Roti cake simply means bake cake and bread together. This is one of the popular bakes and snacks in Malaysia.
    Imagine you get to taste bread and cake in your every bites. The sweetness and softness in cake compliment with the bread so well. If you have not tried this roti cake, I suggest you bake one right away!

    ~Recipe yields 2 loaves ~
    Sweet Stiff Starter
    30g sourdough starter
    90g high protein flour
    40g water
    15g sugar
    Dough Ingredients
    200g high protein flour
    15g sugar
    4g salt
    85g milk
    1 egg (55g)
    15g unsalted butter
    All of the sweet stiff starter
    Cake
    meringue
    6 egg whites
    80g sugar
    6g lemon juice
    yolk batter
    6 egg yolks
    90g cooking oil
    60g milk
    100g low protein flour
    20g cocoa powder

    200克 高筋麵粉

    6 顆蛋白
    80克 糖

    6 顆蛋黃
    90克 食油
    60克 牛奶
    100克 低筋麵粉

      抹茶粉不可以用可可粉这么多。可以试试10克抹茶粉

      是的。我的面团在28度醒发了2.5小时。如果你的室温需要更久。

    Hi CS would like to know what size egg you are using and how long is the fermentation after placing in the baking pan before pouring in the cake dough. I am baking it today my stiff starter will be ready by 9am 😁

      I use A size egg. The final proof took me about 2.5hr at 28C

      Can try with 2g instant yeast. Adjust hydration according since no starter is used

      Pan size 20x10x10cm. The dough final proof for 2.5hr at 28C before pouring the cake batter. There after bake it right away. Kindly turn on the subtitle

    Hi Chiew See, my egg yolk batter was thick and could not mix well with the meringue. What did I do wrong?

      The yolk batter is thick. When u add milk, batter thicken and you can add yolk quickly. There is a possibility you over heat the oil so the batter tends to be too thick. Use small part of meringue to loosen the yolk batter. Then only pour back to the rest of meringue to mix. This ease the mixing since yolk batter is thick

      You can use any yeast dough for the bread

    老師:請教一下視頻所說當酵種頂部為圓頂時,是否表示酵種仍在發酵中,但若有圓頂也達到2倍以上此時酵種能用嗎?謝謝

      只要酵种没塌(collapse),都还能用的。如果塌了才用,恐怕面包会带酸、还有面团发酵能力比较不理想。
