I am from Austria and I think I can help. In the German language you say "Sie" not only if you want to be polite, you also juse it, if you speak to someone you don't know. Vader knew, that he was Luke's father and he also knew a lot about him, so he jused "Du". Luke knew almost nothing about Vader, that's why he jused "Sie". I hope I could help and sorry if I wrote some things wrong, I only have English in School since two years.

Personal opinion: "NEIN! *ICH bin* dein Vater" in german makes more sense in terms of emphasis on the words than "No. *I* Am your father!" because it makes more sense in context with the claim. From the intonation in the english version, if you wouldn't know the previous line, you'd be excused to think that luke said that something like "X is my father!". While in the german version, the emphasis also being on the "*bin* (am) makes more sense as refutal of the "Obi Wan told me that you've killed him!"
That has always been the problem I have with the italian version too. The emphasis is on "io": "IO sono tuo padre", instead of "io SONO tuo padre. As you noticed, the contrast is between "I am your father" and "I killed your father". For this reason I like the german rendition better. (Full disclaimer: I'm italian)

I like the French version, Vader sound apologetic that this is the way he has to deliver that information. Considering that he's about to ask Luke to join him, it's believable that he wanted this encounter to happen on better terms, but it ultimately came down to a duel between them.
