@@Katfancy40 some medication have awful side effects of weight gain. 😕 check online to see if what you take has that side effect listed. If it does do your research for something else. I hate to say it but you really have to be your own advocate and Doctor. Then go to your doctor and say I need something else. I wish you well on your journey through life.
I love your recipes!!!! I also love salads and I'm not vegan but I am vegetarian. Here are a couple ideas: Coleslaw salad on baked potato Shred cabbage, carrot, diced red onion and apple, add raisins and walnut pieces and a small amount of coleslaw dressing, serve over open faced baked potato Thai stir-fry Caramelize onion, add fresh ginger and garlic, add chopped red pepper and julienned water chestnuts, add bean sprouts and snow peas, pour Thai chili sauce overtop. Bring to a boil. Serve over brown rice. This is best eaten a day later and also good cold. Greek salad Red onion, romaine, cherry or grape tomatoes, cucumber slices, bell pepper, feta and Greek dressing. Nice with a warm piece of crusty bread. Taco salad Cooked peppers and onions, lime infused brown rice, taco seasoned black beans (or vegetarian chili), guacamole, shredded cheddar cheese, on a bed of lettuce. Dressing is taco seasoning with some oil and honey in it. Tuna salad Broccoli and cauliflower florets, shredded carrots, diced onion and celery, on lettuce. Put 1/2 can of good quality canned tuna on top, drizzle olive oil and white balsamic vinegar overtop. Salt and pepper well. Garden salad Lettuce, tomato, red onion, bell pepper, cucumber. Croutons, cheddar cheese, diced hard-boiled egg, Honey Dijon dressing. Warm Greek salad Boiled new potatoes (sprinkle with lemon juice, olive oil and garlic salt), romaine, bell pepper, tomato, cucumber, red onion, feta, red wine vinegar and olive oil, oregano, salt and pepper.

I’ve spent most of my life being very fit and good health, as I have been military most of my life and I’m now retired. However some years ago my life partner died. Without realizing it I began eating my way through my grief, and drinking more alcohol than I normally did, and now I find myself in a position I’ve never been in before in my life, grossly overweight and extremely unhappy with what I see in the mirror and how I feel. Your broadcast was so motivating that I’ll have you know this is the first time in my life I’ve ever subscribed to a RUclips channel before. Your talk about the five things that you did to start your journey and keep on your journey were so motivating to me that I feel like now I have a partner that I can visit every day in my weight loss journey. I also have to lose over 100 pounds in order to get back to the shape I was in before my partner died. I am in my late 60s so of course weight loss is a challenge, but after listening to you I realize that I do not aid myself by saying I can’t and using my age as an excuse. So here I am now on the first day of a new journey with a new weight-loss companion, my new partner, Carla . Thank you Carla I plan on watching more of your videos and leaving comments for you because like you, feedback is very important to me and I know that with the feedback you know what kind of impact you are having. So I've just got your videos on in the background while I do other things and i honestly wasn't expecting to get introspective while watching this one. These salads all look amazing, and it made me realise I can't remember the last time I had a salad. I realised it's because i had subconsciously categorised salads as "too much effort," which has the undercurrent of "I don't deserve that level of effort." Your videos and your constant reiterating about showing up for yourself and what that means and what it looks like in practice has been so valuable for me and challenging a lot of thought patterns I've had for a long time. Even with "just" a recipe video. Thank you so much.

They are cracking ideas there :). I am presently on my own ‘journey’ to shed the weight I have piled on since losing my wife. I was always effortlessly slim but something obviously changed in my physiology and I shot up to 18 Stone when I should be about 13 Stone :O. I have trimmed of a couple of Stone so far but it’s a hard road … hence my admiration for folk like yourself who have really turned things around :respect:

I watched this last night and just made the taco salad with black beans… OMG this is the best salad I’ve ever eaten!! Thank you! Can’t wait to try the others 😁 I couldn’t find salsa verde so used the diced chipotles in a jar from Tesco.. where do you find it in Dublin?

Hi, Carla! Have you gotten hip to soy curls, yet? Those could potentially be a good substitute for the vegan "duck". I don't know if you have access to those in Ireland, but they're very popular in the United States. I haven't personally used them, yet, but I've seen a lot of RUclipsr's putting them in their dishes and they seem to really like them.

I can't tell you how blessed I feel to have found you. Not only are you vegan like me. But you just proved that you don't have to be oil free(Starch Solution) to lose weight. It’s not that you have to be “Oil Free” to lose weight necessarily but it’s about eating Nutritious Food that will benefit your body as well as help you lose weight. Oil has no nutrients! The vegetable that it comes from has the nutrients and when all the fiber and good for you parts of say an olive, has been stripped away, you are left with the oil! Plus, it’s not needed to cook your food. You can sauté veggies beautifully without oil. Oil is just empty calories but if you consume fewer calories than your body needs, you will still lose weight.
@@debbieholt8261 I’ve tried water sautéing but it doesn’t give the same flavor and texture results as sautéing in a small amount of oil. Small amounts of oil are not harmful… life is too short to worry about 2 teaspoons of olive or peanut oil in a veggie sauté!

I also love salads and I'm not vegan but I am vegetarian. Here are a couple ideas:
