One of the things I do with my students as part of their low incidence course with me is we take a very popular text...or even their own favorite childhood text..and we adapt it using the principles of universal design for learning....it's very time consuming to find appropriate texts and then modify...I used a third grade Charlotte's web text and said the student has a moderate intellectual disability (IQ 50) and modify the first chapter of Charlotte's web for the student...
