I was born in Albuquerque, only lived there a year and have spent my life in Texas, and I so love green chiles. Every year during green chili season we get roasted green chiles. So good. Your corn recipe looks delicious and I will be making this. I enjoyed your video you do a very good presentation . I have made green chili stew which is a New Mexico dish I believe.
My kids love this! Whenever we go to El Paso, they gotta have one off the street! I raised little El Paso kids!! They love corn in general, I think they get that from me... great job, nice onion!
Thank you. You had me when you were cooking the corn, peppers, onions, and garlic in your skillet. I would have eaten it right out of the skillet without the sauce. Yum 😋
I'm sure it would still be delicious without the sauce, though it (and the cheese) does take it to a whole other level. 🤤Thanks so much for watching and taking the time to comment.
The first time I had this was from a street vendor in a Chicago suburb, in a cup, of course. Now you find it in restaurants and it’s trendy, but boy is it good! I need to make this at home, so thank you for this video 😊
I think you're right about it becoming trendy. I never had it growing up in southern New Mexico, but now I've been seeing it more often. I hope you enjoy it homemade!
Love watching you cook. I live in Missouri and can get only Anaheim peppers. Good substitute but discovered Hatch chilies when I visited my daughter her husband at El Paso. She was in Army Sargent Major School. Love this corn recipe you are making.
Nuevo Laredo Mexico, corn on a stick, roasted, dipped in sauce, chili powder on outside, served in a cup. Also pinto bean soup with tortillas. Buda, TX, looked much like yours, served in a cup at my nieces volleyball games. Deliciousness 😋
My wife's family is from the Rio Grande valley, and I have lived all over Southern California, Arizona, New Mexico and Texas. "Esquites," this is new to me. And I ate street tacos in M de F, C. Juarez, and Chihuahua. How come I never heard of esquites? Anyone can find all the ingredients, just look under mercado. La Plaza, La Michocana or Fiesta are the local markets. Wal Mart also has everything on the recipe. Hatch Chiles? When in doubt, more is better. Huevos, tamales, papas, frijoles, me gusta con Hatch chiles.
Is that right? How interesting. I'll have to try that. As ugly as they looked, they tasted really great, so I definitely want to plant more. Thanks for the tip.
For those without access to Mexican Crema, you can get a similar result mixing milk into sour cream. And crumbled Feta is a reasonable substitute for Cotija if you don't have access to that.
Cheers from L.A. The hatch chili is roasted when added, right? It seems like it is roasted. I've seen other recipes where they add fresh peppers to the skillet, I love the idea of 'roasted pepper' for more depth of flavor. :)
I'm from Albuquerque and I'm a big Hatch Green chili. What I want to know is what does the whaquio cheese taste like. I have never had any Mexican cheeses. I've had Parma and I don't like the smell. Can you please help me
I may be wrong but I think in this recipe she is saying Cotija cheese. If that is correct, I think the taste and texture is very similar to feta cheese used in Mediterranean cooking. They both have a salty and slightly pungent taste. The Cotija dissolves on your tongue much faster than feta.
Thanks Marcy for your fantastic videos ! I’ve really learned a lot from you. I live in Southern Colorado and we fortunately have a strong Northern New Mexico influence here. I doubt ( as a Gringo) I could survive without Hatch Green Chile or as they say ‘ Christmas Style ‘ red and green sauce for very long ! I’m a huge fan boy ! Thanks again !
What a sweet comment! I'm thrilled that what I have to share would be helpful to others. Thank you for taking the time to tell me. Love that you are a fellow Hatch chile enthusiast!
I didn't grow up eating this at home in southern NM, either. I only had it when I was older. It must have taken a while for it to make its way this side of the border. Now, my mom says no local fiesta is complete without it. We all love it.
@@marcyinspired1442 Well it's true sweetie! Thank you for your help in inspiring me to become a better cook of Mexican dishes! Your videos are the very best! 😘
Of course!! And thank you for sharing your cooking talent with us!! I'm definitely making the green Chile stew again this week now that it's been cold 🥶
That red onion looks like a leek. Did you plant it from seed? Maybe the seeds were mixed up. Once I had a leek that got old in the fridge so I put it in water to get the roots going, then put it in soil, and it grew a flower just like that. I took a neat photo, on a black background. Well, maybe they just flower similarly, too. :) We used to eat corn and squash tacos, in fresh corn tortillas with queso fresco. This reminds me of that.
Oh wow! I planted mine from an old onion that had sprouted a root in my refrigerator. I just took that and stuck it in the soil. (It flowered so beautifully, I can see how that would make a beautiful photo.) Mine was definitely a red onion, it just didn't look like one when I pulled it out. It tasted really good, though.
Marcy, i know you just did the esquites, but could you take us through your method for elotes entero. I know its very similar but i much prefer it over corn in a cup and would like to see it prepared so I get it right.
I shared a recipe for Mexican Street corn, which is entero when I first started this channel. I shot it myself with my cell phone, so the quality isn't too great, but the recipe holds up. Here's the link: ruclips.net/video/L9az0XrYZzI/видео.htmlsi=hD9G_Uil8nSjsSDV
Well that not only looks delicious it also looks easy to put together! So you always eat with a spoon? Are tortilla chips or some cheese quesadilla allowed?
Scooping this up with tortilla chips is definitely a good way to go. I definitely wouldn't turn down a quesadilla, either. I think you'll love this any way.
Hi Sylvia. Hope you're doing well. Yes, it can be served cold. In fact, if there's any leftover, my husband usually eats it straight out of the refrigerator. We love it hot or cold.
Your esquites look so delicious. Presentation is 100. I have watched many videos for this recipe, your video was far better than all of them. So professional and to the point. From one latina to another...thank you 🙏🏽🧡
❤OH my goodness I can't wait to make this. I'm so glad you are making more videos I get so excited when I'm notified of a new one. I hope you had a Wonderful Mother's Day ❤.

Thanks for the nice comment. I love reading where people are watching from and how recipes are relatable in different parts of the southwest.
looks like it would be wonderful scooped up with a tortilla chip ... yum!!
You nailed it, for sure. In fact, that's how a lot of people have it.

My mouth is watering. This looks so good.
I hope you try it. It really is fantastic.
Hatch green chile DOES, in fact, make everything better. 😃
YES!!! Spoken like someone who knows where I'm coming from!👊
Indeed 👍🏻
Right before adding the cheese I gave it a taste and it was so good, I left it as it was. We loved it! Thanks for sharing!
That's great. Glad you enjoyed it, even without the cheese.

I wish we had Smell-O-Vision, because this looks like it smells heavenly!
All I can say is yummmmm 😊
And you would be correct.
Thanks again , Hello from Utah,we love hatch chilé on everything . Awesome recipe.
Looks amazing. I enjoy the Mexican mayonesa. It has lime. Mmm 😋
I have never tried Mexican mayonesa and didn't realize they put lime in it. I'll have to try it sometime.
wow! i gotta make this for my company picnic. I think it will be a hit, thank you for the Recipe and the Idea!😁
I'm sure it would be a hit. And it's great hot or cold. Thanks for watching!

Tajin is so good on popcorn btw xo
That's a great idea! For a while, I was putting Tajin on everything, but I never tried it on popcorn.
OH 😋 yummy 😋. I've never had this before, just street corn 🌽
Looks Soo good 👍. Thanks Marcy 🤗🥰. BLESSINGS to YOU 😇🙏
It's like street corn in salad form, so you will definitely love it. Thanks so much for the sweet comment.
Thanks for a great recipe!.....going to fill my bathtub with this good stuff...see you in the fall, if I see you at all...!
Haha! Hope you enjoy! 🛁🌽
Fresh corn is now available and I made this last night. DeLISH! All ingredients prepped ahead of time is excellent advice.
Marcy, my onions split as well. I planted them in the fall. Try planting some now and they will do much better!

How about roasting the corn first to give it a really great flavor
I couldn't agree more. I overcrowded my pan in this video, but when I cook a smaller batch, I get more char marks. It's so yummy.
