How to Make Sourdough Bread...in a Pressure Cooker!

  • My oven's igniter went on the fritz and I was jonesing for some fresh sourdough bread. What to do? While the part was on order, I decided to use my pressure cooker to bake the bread. It's easy to do!
    Sourdough bread ingredients:
    4c flour (all-purpose or bread flour)
    2 tsp salt
    1-1/4c water
    1c sourdough starter
    Mix ingredients for 10 minutes. Transfer to another bowl and let rise covered with a towel for 12 hours. Remove from bowl and knead on floured counter for a few minutes. Take dough ball and place in a proofing basket or some other bowl for 4 hours (I used a wicker basket; I don't recommend you do it though).
    Let pressure cooker preheat for 5 minutes on medium high heat. Put the perforated tray in the bottom and then a pie tin on top of that to raise the dough up off the direct heat.
    Place a sheet of parchment paper over your proofing bowl and turn the bowl over so the dough is sitting on the paper. Place the dough and paper in a second pie tin and put the pie tine in the pressure cooker on top of the tin already in their.
    Remove the rubber gasket from the lid of the pressure cooker to prevent any chance of it melting. That would not be good. Lock the lid onto the pressure cooker. It will be loose because the seal has been removed, but that's okay because we're not trying to build up pressure within. Thus, no weight is needed on the steam vent and the pressure valve stem won't pop up.
    Allow the bread to bake in the pressure cooker for 15 minutes and then turn the heat down to medium. Go ahead and look inside, you know you want too. But it's going to need to cook longer and I set my timer for 15-20 minute intervals to check on the bread's progress.
    In this video it took about 35 minutes after reducing the heat for the bread to be done. Then cool, slice, and enjoy. Or, if you're like me and you enjoy the taste of hot, fresh-baked bread cut yourself a slice and dig right in!

    Love the idea . We don't have ovens in our homes in India and I really wanted to try out artisan breads . Pressure cooker is something every Indian Household has . Thanks a bunch 😉 . Loads of Love from India 🇮🇳

      @@HomesteadDIY you can brush the top of the loaf with milk or butter after it is half cooked so as to get a brown crust . It is a shortcut that is often used while making ' Kulchas ' without Tandoor Oven in Indian Homes

    I really liked the way you made bread in pressure cooker. It doesn’t look like oven baked bread from top but looks delicious inside.

    That's a pretty cool mixer! I've never saw anything like it. Beautifully done!! I usually let my first rise only go for 6 hrs or so. I love seeing how others do it though! I will be trying this in my pressure cooker! Thanks for the video!

      Thank you! I'll admit, I'm not a seasoned vet on this sourdough bread thing. You should've seen how long it took me to get a starter going! I was following rising instructions I've read and seen elsewhere. I'll also admit using the pressure cooker was a matter of necessity since my stove was temporarily broke, but it really did work out well. Cheers!

      RuggedHomestead, I did mean I'll try it 'out of necessity'... I was looking for alternatives to cooking in the oven. And hey, one can only learn by trying! Your rise time is fine and your bread was beautifully done! There is no 'one way' to make sourdough bread! Thanks for your reply! 😄

      @@ankitagoswami9176 I would suggest keeping it in the oven @200°C uncovered for 10-15 mins after being done in the pressure cooker for that nice crusty top

    Really don't need to knead a dough if you get the hydration up--just incorporate everything and fold it 10-12 times on itself. Don't need to knead it again if it's fermented 12 hours. Kind of a waste of time. I would just fold it over on itself 5 or 6 times and then bake it or put it in the pressure cooker. Not crappin' on you as I'm sure the loaf came out good anyhow. Save you a lot of time. Try it out.

    So this is deceptive... The pressure cooker is not being used as a pressure cooker, just as a pot. The video should be titled, "How to Make Sourdough Bread in a Large Pot."

      The point is...the pressure cooker comes with "racks"....to elevate it of the base...but I suppose in theory...just put a rack down in a big pot!...also seen other videos where they put a stack of pizza in there...because pleasure cooker has stacks as well...and some people put salt on the bottom of pan...I don't know why tho....

    hhhmmm i think that you ought to be looking up other sourdough recipes......16 hours to let it rise is ridiculous and putting it in that basket is disgusting without paper or something underneath......

      I'm a noob when it comes to sourdough bread, so I'd love to have a recipe that has the bread rise for less time. I'm impatient! But as for the basket, I don't know how you clean but I keep my shit straight. To each his own.

      RuggedHomestead I'm not going to argue with you but as far as the basket unless you keep it covered there is no way you can keep dust out of all those nooks and crannies no matter how clean you think you are.

    Looks good. I am a little sad the top isn't browned but I guess that's guaranteed to happen with a pressure cooker recipe. I just started my first attempt at sourdough bread but am having problems. I let my dough sit for like 4 hours and it isn't rising. I'm gonna sleep on it and hope that it isn't my starter not being good because I've been working on feeding my active yeast for a week now.

      Sour dough is a tricky business, I'll grant you that, though some videos I watch make it look effortless, particularly the starter.
