It looks really good, but you don't salt the fat cap when dry brining. The salt wont penetrate the fat cap and wont get to the meat. You only dry brine the exposed meat, itself.

There can be some nice Choice out there Beau, but stepping up to a nicely marbled prime is a very noticeable difference. Soooo flavorful!

I get all my tri tip from heb. It is so goood. I prefer it over brisket. I live in Texas no one here really knows what tri tip is
