    YEP! This is exactly how I cook my tri tip. It's got to be my favorite cut due to that! So delicious. Next step is to try a prime grade instead of a choice!

      There can be some nice Choice out there Beau, but stepping up to a nicely marbled prime is a very noticeable difference. Soooo flavorful!

    FANTASTIC cook CJ!!! Tri Tip is one of my very faves!!! Got to tell you, on your recommendation, got me some Uncle Chris' steak seasoning and put it on EVERYTHING beef!!! LOVE IT!!! Going to get the monster bucket of it next!!! LOL

    I get all my tri tip from heb. It is so goood. I prefer it over brisket. I live in Texas no one here really knows what tri tip is

    It looks really good, but you don't salt the fat cap when dry brining. The salt wont penetrate the fat cap and wont get to the meat. You only dry brine the exposed meat, itself.
