- How To Make Grenadine Syrup For Cocktails
Welcome Friends! Welcome back to the kitchen and "Cocktails 101" where we're going through all of the background stuff that you need to get ready for your first, or next cocktail party.
Today we're going to make real grenadine syrup, which is just pomegranate flavoured simple syrup. Grenadine serves a bunch of different purposes in cocktails; first the colour, that nice bright red colour that it brings, sweetness because essentially it's just a pomegranate flavoured simple syrup, and just that hint of pomegranate flavour.
Ingredients:
500 mL (2 cups) fresh pomegranate juice
500g (2 cups) Demerara sugar
60 mL (¼ cup) pomegranate molasses
5 mL (1 tsp) orange blossom water
15 mL (1 Tbsp) vodka
Method:
Combine pomegranate juice, sugar, molasses in a small pot over medium heat.
Stir while heating to dissolve sugars completely.
When sugar is fully dissolved, remove from heat and allow to cool to room temp.
Stir in Orange blossom water, and vodka.
Store in a sealable container in the fridge.
Will keep for at least 8 weeks.

Mint Julep. I actually steep the mint in the simple syrup to avoid having to mull it with the sugar. It makes it much easier.

I love grenadine in milk shakes.
@nelliebly Bitters are on the long term horizon - I've made them in the past with good success, now I'm refining the process. The Manhattan is in the works; the evolution of that cocktail over the years is pretty crazy.
@admirathoria 00 Absinthe will be making several appearances over the next few weeks. It was a staple ingredient in several classic cocktails, but was removed and never returned after the ban was lifted.
My wife and I regularly make our own grenadine and other simple syrups for cocktails. I typically make my simple syrups in a pot on the stove like your recipe, but once I saw a grenadine recipe online that requires no heating element: just add sugar, pomegranate juice, and orange blossom water to a mason jar, tighten the lid, and shake for about 1-2 minutes. I didn't expect the sugar to completely dissolve, but it actually did. Honestly I haven't noticed much of a difference in the outcome of taste between the two methods. But in fact, I would say just shaking the mixture ended up tasting even more pomegranate-y and purer to me. One less pot to clean I guess.
Moving from the Midwest to Europe....I had my first experience of having pomegranate trees. After numerous ways of trying to extract the juice, thought there has to be an easier way. Went to my neighbor who called her mom. Told me to take equal weights of pomegranate seeds and sugar. Put in glass jar. Cover with cheeses cloth secured with a rubber band. Stir daily. After approx 25-30 days the pips float to the top, leaving beautiful juice behind. In a glass i use about 1/4 juice and the rest club soda or water. Also when I make lemonade I just put a cup or so in with the juice and water.....perfect pink lemonade.

I would love to see you make a Jack Rose which is grenadine lemon juice and Apple Jack. A local bar makes this with their own grenadine which also,has quince in it.. Aa,along.

@@michael48892 Nah, it takes time to test the different formulations and tweak them. Plus the money for the materials (raw chicken).

Could you make the syrup and freeze them into trays pulling out a few at a time when needed?
Finally, a brand we have in New Zealand (Rose's). However, I've never seen grenadine.

I've always heard to measure over the pot incase you spill it, so the idea of not measuring over the pot, incase you spill it, always seems odd, but I guess it makes sense, but honestly a tiny bit extra wont ruin a dish. although i did add like a teaspoon of vanilla extract to something I only wanted to add a quarter of a teaspoon to by accident, although luckily that was the perfect amount, I was making your lemon ice cream, and I recommend maybe adding a bit of vanilla extract next time you make it glen

Giroux Grenadine had pom syrup in it years ago, now corn syrup and flavoring.
I remember buying grenadine with my mom and dad at a discount store. It used to be like 2-3 dollars for a big bottle. I can’t find it now for that same price :/ my dad used to mix this orange flavored fiber mix with some grenadine. I still do it but I just shake my head when I see the price at Walmart. It’s about 5-6 dollars now for a tiny 12 oz bottle.
Glen, would love you to try adding pomegranate molasses to the Rose’s and compare it to your homemade as a quick (but quality) substitute for us, the lazy and cheap

If you want to use the tge orange blosom water and dates you should try our maltese "imqaret" they are sweet fried street food you should definitely try them.

Just wondering: is there any reason why you couldn't freeze some of the grenadine syrup to extend the shelf life? I suspect the sugar might separate out when it's thawed but whisking or heating it gently would probably bring it back together.
Or could you add a little citric acid (1/2 tsp?) to the syrup as a preservative to extend the shelf life? Pomegranates already have a tart flavour component and it probably wouldn't be out of place in most cocktails which uses grenadine.
This batch has been in the fridge now for 4 months, and it's still fine. For the most part the sugar content is high enough that it may never go 'bad'. But I have to cover my arse with a low estimate.
isn't there enough sugar already in the pomegranate juice that you should adjust the ratio for adding more?

Not real grenadine. American bars use artificial cherry flavored high fructose corn syrup as "grenadine".
Thanks to Rose's I just learned that Grenadine was supposed to be flavored with Pomegranate today. I seriously had no idea.
This got me thinking about Rose's Lime Cordial - I always find I need to use LOTS to get the amount of lime flavour I want. However, I've found cheaper lime cordials pack a better punch. I've not had Rose's grenadine, Bol's is far more prevalent in Europe

It probably is fine in the cupboard - I just keep it in the fridge.
Could this stuff be made with just the molasses and the juice inna 1/1 ratios?

ad a teaspoon of citric acid to boost the colour. bring it to a boil for a sec, to extent the shelflife even more, after cleaning your bottle well.

I’ve seen people use maraschino cherry juice as a substitute for a grenadine.
T-shirt idea: a picture of a citrus being squeezed and the juice coming out into a glass, with a stylized font saying "squozen"...however you spelled it.

I only got the grenadine juice... Oh well, it'll have to do today.
I'm Polish and I have never seen that brand of Spirytus. And we use a ton of Spirytus for pastries and cooking.
edit: I looked on google it's Spirytus Gdański. I'm from Gdynia which is really close to Gdańsk. It exists, but I have never in my 32 years of life seen this on shelves of any store. I guess it's more popular abroad.

Here in the Netherlands, I've never seen fresh pomegranate juice, nor pomegranate molasses. Also orange blossom water seems hard to come by.

All we see here in the uk is monin grenadine here in the uk and it has no pomegranite in it at all. Just blackcurrant, raspberry and edlerberry
