That is awesome!!! This is my first year growing radishes and mine did not grow as fast as yours lol (in DE). Great snack my grandmother gave me was sliced radishes with a teeny bit of salt when I was a kid. And I Looveee that bed! 😍 so so cool.

I do a Thai refrigerator pickle for my radishes, sweet, salty, tart and crunchy, SO GOOD!!! 1/2 C sugar- 6 T Thai vinegar (not as acidic as white) 1 t kosher salt - 1C water 8oz of vegetables 1/2" thick, or quarter the radishes, use a quart jar or plastic container with a lid, refrigerate fo 4 hours or overnight! YUM Pok Pok cookbook!!! That Bok Choi looks fantastic! Stir fry!
They really are great roasted! Clean and slice in half, splash on some olive or avocado oil, sprinkle with herbs of your choice and salt and pepper. Lay them out on parchment paper in a baking sheet. Roast at about 350 for 45 minutes or so. It’s kind of a go by feel thing. You can do them alone or with other root veggies.
I'm extremely new to gardening, my main question is how many seeds to I place in a single spot and how far apart do the plants need to be? There are alot of seeds in these packets
Search square foot garden seed spacing on Google and that will get you started. Generally a few seeds in each spot is good. For the really small seeds like carrots just a tiny pinch of seed will give you 2-5 then once they grow up a few inches thin them down to one plant per spot

Glad your experiment went so well, I kinda knew it would. You can preserve those radishes in relish or pickle them.

It is all of that good manure ! When you lay down a fresh batch of manure, get a propane weed burner and go over it before planting.
I had kale still in my greenhouse for the 3rd year sprouting up, same with swiss chard which is almost a weed here

Radishes are actually pretty good mixed into veggie soup.
Do you use any sort of log book system to keep track of your garden? Some thing that helps you know what was planted when and when havest is due?
I use One Note for just about everything. I take pictures, draw diagrams, and put notes in when planting and planning

You have to watch what you use in your Soil from your Kitchen... Most of it is not good using & even eggs shells, For No Till Soil...

I don't have any racist beds:) I normally us an 80% compost, 10% peat moss, and 10% sand mix
