I recommend you to prepare the most delicious PUMPKIN MUFFINS with crispy crumbs according to my recipe. In autumn, you can make these pumpkin cupcakes even every day, especially in cold weather, it's so cozy to drink tea with these cupcakes, they are really like fluff, so soft, airy and juicy, not dry at all. Ingredients for 12 muffins
Dough:
2 eggs
Pumpkin 320 gr
Vegetable oil 90 g (I use coconut oil)
Sugar 130 gr
Zest of 1/2 lemon
Lemon juice 35 gr
Cinnamon 2 gr
Ground ginger 2 gr
Nutmeg 1/4 tsp
Cardamom 1/3 tsp
Vanilla to taste
Baking powder 4 gr
Soda 4 gr
Salt 1 gr
Flour 250 gr
Crispy crumb:
Flour 35 gr
Sugar 35 g (I have cane sugar)
Butter 25 g (frozen)
Bake at 190 °C/374 °F for 25-30 min
