      @@PigPieCo We're all safe here! The evacuation notice was thankfully a false alarm, however it was for another fire that started. I didn't even know how bad the fire was until I got an email about it from one of the cassette merchants I buy from all the way in Europe lol.

    Where did you learn the classic pig pie co pizza dough recipe?

      My first few doughs were directly from Vito Iocapelli, then I started dropping the hydration so it was easier to work with (64% - 66% is my favorite right now, 2 cans of beer and 1,000 grams flour is closer to 68% but it's just so easy) 25 grams of salt is directly from Vito still, haven't experimented with changing it yet. 3 grams yeast is just a random guess when I do 1 night doughs changed from 2.5 grams for 2 night doughs, which was also from Vito. Beer happened just because, and now we're trying to make dough with every beer that Market Basket sells. Appreciate you!

      @PigPieCo oh wow. Vito is the guy who made me switch from frozen pizza dough to making my own.
