Time wears away at stone and being as the noses are so much smaller than the rest of the statues, it only makes sense that sandstorms would wear them away sooner than the rest of the statue. Time, sand, wind, and water will destroy anything made by the hand of man. Even the mountains aren't eternal and those are natural formations.

And the "ancient egyptians" have long been replaced by an overwhelming population of Arabs since Muslims conquered Egypt in 641. The rulers of the new kingdom excavated tombs in the valley of kings instead of building pyramids and those were also mostly looted after the collapse of the new kingdom. That's why Tutankhamen was so famous, not because he was a remarkable king but because his tomb wasn't looted before it's modern discovery.
