Always a good idea to make extra when it comes to sauces, it means that you always have something to throw together a quick meal. I totally agree with you on the Alfredo, fantastic dish
So I noticed that Julia Child has cooks pat the meat with paper towels prior to putting in the pan. Do you not do that, or was it just done not on camera? [I don't know a lot, I have just seen Julie & Lulia like 17 times]
No need, just make sure that the meat comes out of the fridge an hour before so it doesnt instantly cool down your pan. As long as the heat stays high then the meat will fry and not boil. If you are using frozen meat that has been defrosted then I would reccomend drying it first as it will release a lot of liquid while defrosting
