I had to find ways to put vegetables & dal into her stomach. She would eat vegetable theplas or parathas readily. I used to make the following for her school tiffin. Still do. 1. Grind together beetroot, carrots, ginger, green chillies. Chop palak/methi/any leafy vegetable & fresh coriander. Add 1-2 boiled & mashed potatoes or raw banana. Mix all together. Add salt, dhaniya & jeera powder, pav bhaji masala (optional), red chilly powder, garam masala (optional), chat masala or amchur powder. Add wheat flour & make a dough. Roll out theplas/parathas like rotis. Cook on tava applying ghee/oil. Serve hot with curd & green garlic-pudina/mint-coriander-green chillies -ginger-jeera -salt-sugar-lemon juice chutney or tomato sauce or pickle. 2. Bottle gourd/lauki/dudhi & palak theplas. Grate lauki. Chop palak. Add ginger-green chillies paste. Add 2-3 tbsp besan. Add dry masalas. Ajwain. Make dough & theplas the same way. 3. Methi theplas. Clean methi leaves. Do not chop, it will make them bitter. Add a large boiled potato (optional). Add 1-2 tbsp besan. Make a dough & roll out theplas like rotis. Apply oil. 4. Grate pumpkin & beetroot. Add 2 tbsp besan. Add salt, haldi, mirchi, dhaniya powders. Add fennel seeds/saunf. Make dough & theplas. 5. Grate Raw banana, beetroot, sweet potato. Add chopped coriander. Add a boiled potato (optional) or add 2-3 tbsp besan. Add dry masalas. Make a dough. Roll out theplas. 6. Coarsely grind par-boiled or frozen green peas, ginger, green chillies. Finely chop green garlic, spring onions, coriander & a few mint leaves (if available). Add lemon juice. Add whole jeera, salt. Mix together. Make dough of wheat flour. Roll out a roti. Place this mix in a triangle over it. Fold & seal the edges over it in a triangular shape. Lightly press with a belan & cook on tava applying oil or ghee. 7. Finely chop cabbage-carrot-capsicum-spring onions (optional). Add a large boiled potato. Add a little grated paneer & cheese (optional), masalas. Mix well. Make stuffed parathas. 8. Boil together any leafy vegetable & dal with salt & turmeric. Cool it. Mash & make a dough with this adding masalas as per your choice. This can be made with leftover dal & sabzis too. 9. Finely chop mint leaves & coriander leaves in 1:3 proportion. Add crumbled paneer. Add lemon juice. Add finely chopped green chillies & grated ginger. Add whole jeera, salt, garam masala. Mix well. Roll out a roti. Place mix in triangle over it. Fold & seal the edges over it in a triangular shape. Lightly press with a belan & cook on tava applying oil or ghee. Make stuffed parathas. 10. Boil, peel & mash potatoes. Add chopped coriander & green chillies. Add salt, turmeric, chilly powder, jeera powder & dalchini-lavang powder masalas. Add juice of half a lemon.
