Carrot & Cucumber Achar (Indian) | Acar Lobak Merah & Timun (India)

- Ingredients:
◾️2 cucumbers deseeded and cut into 1 inch thick strips with skin in tact (2 timun dibuang biji dan dihiris tebal 1 inchi)
◾️1 carrot cut into 1 inch thick strips (1 lobak merah dihiris tebal 1 inchi)
◾️1 red and 1 green chilli deseeded and cut into one inch strips ( 1 cili merah dan 1 cili hijau dibuang biji dan dihiris 1 inchi)
◾️1 lemongrass cut into 1 inch (1 serai dipotong tebal 1 inchi)
◾️1 thumb sized ginger cut into 1 inch strips (1 halia saiz ibu jari dihiris tebal 1 inchi)
◾️6 garlic each cut into 3 (6 biji bawang putih dipotong tiga)
◾️10 shallots - use a knife and remove the root area (10 bawang merah kecil - gunakan pisau dan buangkan bahagian akar)
◾️a few dashes of vinegar (cuka mengikut rasa)
◾️oil (minyak)
◾️4 1/2 soup spoons of light brown sugar (4 1/2 sudu sup gula perang)
◾️1 heaping teaspoon mustard seeds (1 sudu kecil penuh biji sawi)
◾️1 heaping tsp turmeric powder (1 sudu kecil penuh serbuk kunyit)
◾️1 soup spoon chilli powder (1 sudu sup serbuk cili)
◾️1 soup spoon ground chilli (1 sudu sup cili giling)
◾️2 sprig curry leaves (2 tangkai daun kari)
◾️2 tsp salt (2 sudu kecil garam)

I made it again for deepavali tho we cannot celebrate this year. Still have a small jar in the fridge 🤗. You can add in a little chilli sauce if going to eat it in a day or two for a thicker sauce.

I tried this recipe. It was a big hit among my family members. Added crushed peanut to some separately in the end, it was tasty.
Be careful if adding peanuts or sesame seeds. If eaten in a day or two its ok. But if kept longer in jar, it might cause mould. Happy to hear that all enjoyed it.

That is usually for the penang nyonya acar which is yellowish red in colour with many other vegetables. I have not made it for you tube yet but that once made does not last long because of the many other vegetables like long beans, pineapple, cabbage etc.

Can I reuse the juice for cooking the next round of fresh veg once the first batch has finished? If yes, how many times can i reuse it?
Yes if there is enough. Normally you have to put it in a bottle or jar n the liquid would be just nice to cover the top of the jar. If u are going to consume this in a day or two, adding a little chilli sauce would be nice. I just made some for my family just now tho we cannot celebrate deepavali this year......

Will this achar still be crunchy after you've cooked it?
Follow the recipe till the end n it WILL BE CRUNCHY. The cooking is only for 1 to 2 mins only. Follow the order in which veg goes in. Each veg is cooked for very minimum time. But at the end I mentioned a trick to keep achar crunchy for longer period. By the way, you can also add a little chilli sauce if consuming within 2 - 3 days. 🤗

Hai aunty..kalau saya masak hari mlm esok pagi masih elok ke bole makan..means kite simpan mlm esok ptg kite bole makan..tq aunty
Kalau ikut cara aunty bolih saja. Tapi semua sayur, pisau, papan pemotong dan bekas menyimpan kena di cuci bersih dan dikeringkan. Acar ini tidak bolih kena air. Kalau nak disimpan sampai 2 minggu pun bolih tapi dalam peti sejuk. Nak kuah yg pekat lagi, bolih tambah sos cili sikit.
