I only have three pairs of Nicks, plan to order a couple more next year, but I can watch these videos all day.
I’m an industrial construction worker. I walk on a variety of surfaces from mud to gravel to grating. I also need to bend up and down a good bit, would these boots be okay, what arch do you suggest?
I think these boots would be great for that environment. I have two pairs with the medium high arch, and once I broke them in, they have been the best boots I've ever owned. Wish I had known about them when I was in construction. Take the plunge and order a pair. They will be your favorite boots.

I can see that you used another camera and person to make this video. It's shaky and the quality is not as sharp as before. Still, I love your boots!
They need a tripod and they are zoomed in on every shot to much. They can shoot at 4k and zoom/crop while editing. It is pretty nauseating.
