- Petit Gateau is a small cake, usually made up of various layers, and also usually is a mousse cake.
You all have been asking me for a frozen mousse cake recipe for some time and I finally got the chance to put this video together and could not wait to share it with you!
My cake has a smooth and subtle milk chocolate mousse as well as a rich dark chocolate brownie that is dense and soft.
The final component is the crunchy one, my rocher glaze adds that final touch that makes this mousse cake sing in your mouth!
The options are endless but here you have the perfect basis for any petit gateau, I hope you experiment with this as your building blocks

Milk chocolate mousse
Ingredients
150g milk chocolate
120g whipping cream
1 tsp gelatine powder
4 tsp cold water
160g whipping cream
Brownie recipe

70g coconut oil
150g sugar
2 eggs
30g corn-starch
A pinch of salt
225g dark chocolate
1/2 tsp vanilla
Rocher glaze recipe

I LOVE this, I will be attempting it too! Just wondered, when you mentioned good quality, what does it mean? Is ghirardelli chocolate bars considered good quality to use for the glaze? I have also seen chocolate bars that have nuts in them, can I use those too and not add the chopped nuts? Please do reply :)
