    Chichinga Torkari is a traditional dish made with snake gourd and a special blend of spices. It's typically a delicious, spiced-up vegetable curry. Here's a basic recipe to help you prepare it:
    Ingredients:
    Chichinga (snake Gourd): 3 medium-sized, peeled and cut into square shapes
    Tomatoes: 1, finely chopped
    Onion: 1 large, finely chopped
    Green chilies: 2, slit (adjust to taste)
    Garlic: 4-5 cloves, minced
    Ginger: 1-inch piece, minced
    Cumin seeds: 1 tsp
    Mustard seeds: 1 tsp
    Turmeric powder: 1/2 tsp
    Red chili powder: 1/2 tsp (adjust to taste)
    Salt: to taste
    Oil: 2-3 tbsp
    Fresh coriander leaves: for garnish
    Instructions:
    Preparation:
    Peel and cube the chichinga and potatoes. Set aside.
    Finely chop the onions and tomatoes, and mince the garlic and ginger.
    Cooking:
    Heat oil in a pan over medium heat. Add cumin seeds and mustard seeds.
    Once they start to splutter, add the chopped onions. Sauté until they turn golden brown.
    Add minced garlic . Cook for a minute until fragrant.
    Add chopped tomatoes and cook until they turn soft and the oil starts to separate from the masala.
    Add turmeric powder, coriander powder, cumin powder, red chili powder, and salt. Stir well to combine.
    Add the potatoes and chicinga. Mix well so the vegetables are coated with the spices.
    Pour in enough water to cover the vegetables (about 1-2 cups, depending on how thick or thin you like your curry). Bring to a boil.
    Simmer:
    Reduce the heat to low, cover, and let it simmer for about 15-20 minutes, or until the vegetables are tender and the flavors are well blended.
    Stir occasionally, adding more water if necessary to keep the curry from sticking to the bottom of the pan.
    Finishing:
    Once they are cooked, check the seasoning and adjust salt or spices if needed.
    Sprinkle garam masala and mix well.
    Garnish with fresh coriander leaves.
    Serve:
    Serve hot with rice or roti.
