It's not about iodine, it just has to do with the size of the salt crystals. Usually the larger crystal is preferred as a "finishing" salt, since it can provide a texture. If they're using a salt with a larger crystal size, it's a good idea to say it otherwise if you were to use the same measurements with regular salt, it would be too much.
Nothing is wrong with it in some recipes, or for table salt, but it can give certain things a metallic taste, depending on the amount used. Some table salt also has added ingredients, like dexrose and others that can keep meats from browning as well, or so I've heard. Also, kosher salt has different sized flakes, not as fine as table salt. Those are some reasons. That being said, I almost always just use table salt. Exceptions are things like pretzels, where I want a bigger flake on the salt.
I'd say that the biig difference between spanish and american cuisine is your amazing knowledge and usage of peppers, pimientos . No wonder we brought them back, but you are masters. I love it. Saludos desde Madrid :)

I don’t need the pork but beef bacon is good Sirloin and beef bacon with all those flavors! Doesn’t even need cheese. I add serranos infused vinegar tho Real tortillas are so good!
Bacon in Mazatlán is definitely not the same as bacon in the states :) I might just substitute some lard that I've flavored with a chipotle. Looks tasty!
