Yum! That's the tofu press I have, it's great.
I haven't tried hand pressing, sorry, but you can adjust how much water you want squeezed out nicely, with the one I have.

Tofu soaks up other seasonings and sauces, so if you cook the tofu correctly, it tastes pretty good.
