Dig this Seve, yesterday I had what was one of my best Rum Journey's too date. It takes 3 ingredients, an ounce a half of Pusser's standard (84 proof), 1 dash Angostura bitters and 5 or 6 six drops of an Everclear/orange rind/black pepper infusion. I guess you could call it a spiced rum - of a kind. To make the infusion, 4 oz's Everclear, the skin of one ripe orange and 10 to 15 black peppercorns, coarsely crushed. Let infuse for 7 to 10 days.
I believe in Jamaica they also use a little bit of ginger concentrate in the Jamaican Rum Punch. I never tried it either way though. I have a bottle of Pusser’s spiced, I’m tempted to use it in the painkiller, and maybe even in the hurricane. Thanks Steve 🙏
Missionary's Downfall all day long. All my guests that tried that one fell in love with it, period! :D The astounding part is that even though you pulverize the mint, there is no bitter chlorophyll that whatsoever
Love these. Will be making the Painkiller and Missionary’s Downfall soon. While more of a classic cocktail, have you made a Hotel Nacional? I make mine with fresh muddled pineapple and Plantation 3 Star or Dark.
I’ve forgotten all about that cocktail. It’s never mentioned anywhere apart from Bacardi (as it’s a Cuban Cocktail, so Cuban Rum originally). Could be a great Cocktail.
Such a good cocktail. In NYC, there is a fantastic bar called The Rum House and they have it on their menu. They make it with Plantation Dark (didn’t specify Original or OTFD). I’ve more often used 3 Star.

Steve, have you ever made a drink using Li Hing Mui powder? I bought some a while back, but haven’t tried it yet.
Great video, would love to see a review of the non alcoholic captain Morgan’s by the way!
Interesting. I don’t use it, I use Lyres for my Hen Parties, but might potentially grab a bottle just to see. 👍
