    Welcome to Modern Homestead Alaska. We are located in South Central Alaska near the town of Wasilla.     In the future if you are canning for more than 10 minutes you do not need to sterilize. Another great video. Thank you for sharing your adventures called life!!

    I canned fresh red salmon. No seasonings . It was great as a salmon salad. (Like tuna ). It was really yum.

    Hi Jessica, Aaron and sweet family! Good job on preserving the salmon. I bet the cowboy candy juice made that taste so good. The brisket looks amazing.
    Just a tip, to clean the black off the bottom of your canner. Take wood ashes and rub it on the bottom. I know it works great for stainless steel, don’t know why it wouldn’t work on aluminum.

      ​​@@modernhomesteadalaskaif you use liquid dish soap on the bottom of the pan before you put it to the fire or grill the soot comes right off when you wash it

    It may help!! If you don't chunks it up! When your smoking it!! I would try leaving it in the flay!! And smoke it

    Try cream cheese with your salmon. I know cowboy candy and cream cheese is a very nice party appetizer

    You may find that if you can it right safter bringing it home from fishing, rather from frozen, it may be more juicy.

      So true. It’s so hard to try and figure what we will want to eat like fresh and how much we should can. But I think the longer we do it the closer we are to understanding how much we go through.

    I just want to say thank you, for not saying the "m" word 🤣 also, try putting a drizzle of olive oil on the salmon in each jar before canning. It helps it be "less dry" 😉

    In case you want to know, I've never canned fish, but I've looked it up in the USDA Home Canning guide. They advise to use pint jars and process them for 110 minutes. They state that half pints will be safe but advise to process for the same length of time and they imagine it will affect the quality of the product negatively.

    My hubby loves to smoke meat on the smoker, which I used to love, but since I had COVID I don’t like the taste of smoked meat.

    Went to middle school in Wasilla Matanuska valley and also an anchorage in 1981 to 84. How did you decide on Wasilla as a place to settle and do your Homestead

      Great question, we need to be out of the city even Anchorage is to big lol! So we looked for homes all the way from Kenai to Willow, and found this one just a box no plumbing no electric nothing just a frame. And could not get over the view of the lake and just the feel of the land, it was incredible, we were sold, threw caution to the wind and put all our funds savings everting to get this home, left our jobs and headed off into the land of the midnight sun with nothing left but hopes and dreams. God opened doors my husband found work. And so here we are living our Alaska homestead dream to the fullest.

    Candied Salmon is tasty 😋 when smoking we use a tiny piece in each jar and that smokes the whole jar without over smoking taste. We also like the teriyaki canned salmon. Many Alaskans get a electric smoker and only use it for salmon.

    I'm jealous you can see your driveway! We are still covered in ice and slush. My husband wants to ask where you found chains for the tractor tires. They may help with our lake of a driveway here soon!

    I built my smoker out of a 500 gallon diesel tank and piped in a 55 gallon barrel stove so I can cold smoke 100 fillers at a time

    We also smoke any last years salmon that did not get eaten during the winter. We do a brown sugar and water brine. Then smoke it and package it into small vacuum bags and put it back into the freezer. It doesn’t last long at our house. It’s so good. We do all of our fish canning outside. We do a lot of tuna. I’m curious about how it is pressure canning for that amount of time. I know we do raw tuna for 90 minutes for half pints. That just seems like a long time for already cooked fish.

      I just went with what the natives have done here. It turned out good though. Glad we were not crazy that we are not the only ones that smoke snd canned it later.

    Hi guys. Great video, I know….I say that every time but it’s true. A friend of ours added raw unsmoked salmon in with a piece of smoked and it was so juicy and good, I guess the oil in the raw fish replaced the oil in the smoked and it was a perfect balance. At least the jars we got from him were, just a thought. Thanks for always making my day 🇨🇦🌷

    I'm surprised you didn't throw a jalapeño in there, most alaskas do that. Me personally I do soy and brown sugar or maple syrup

    We are starting the similar process of spring cleaning freezers. Wayne found a beef brisket and we are going to attempt smoking it, sans a dedicated smoker!! 🤞❤️.
    As your video closed, showing pictures of your holiday table, you truly showed your heart, as a couple!
    I am certain your goal was to share the blessings of a full table of food. But it struck me as a testament of the priority you and Aaron place on the care of your family. The array of food was beautiful, but the loved ones gathered around that table is your passion . I applaud you.

    I canned a lot of salmon when I lived on the west coast. I just packed the jars added a rounded tsp of sea salt sealed and pressured for 90 minutes for my altitude. You need to build a smoke house.
