I was just talking about KY beer cheese with coworkers last week, looks really good Jeff. More and more I am seeing beer cheese here in TX.

Dust your shredded cheese with cornstarch before melting. Technique from Alton Brown's fondue recipe.

I think that's what they basically do with the pre shredded cheese. Keeps it from sticking. It will also make any melted cheese thicker, and gritty. I don't recommend, but maybe I haven't done it right....?
