Because Science: What you see there is steam in the same way that you can see your breath in cold weather. The hot sauces have created a atmosphere in his mouth (more accurately at the back of his throat and coming from his stomach) that are heated higher than the ambient temp in the room. This makes mini steam spouts.

If Hot Sauce (or any thermogenic ingredients to include Peppers and anything with Capsaicin in them) do not cause a rise in temps, why is the natural body response to sweat? The body wants to stay in a state of homeostasis and when you introduce something that raises the body temp, the bodies natural instinct is to lower the temp. The natural way for it to do that is sweat. That is why when you eat spicy foods you sweat. It is quite literally the proof that spicy foods and hot sauces raise temps.
