The noodles are called Mung bean noodles and sometimes called Bean thread noodles. The best brand that doesn't get soggy comes in a plastic bag wrapped in pink netting. Yep, taro and woodear mushrooms are what makes vietnamese spring roll different. Otherwise it's just chinese egg rolls. Instead of cabbage, it supposed to be jicema. We don't use cabbage. That's chinese.

The chicken base is also a great addition to the usual recipe that really works. Also, the Three Crabs brand Fish Sauce is a must. It's the only one that's really used in most Viet kitchens....great quality product with a very distinct taste. Most of the others are so salty and not right at all, especially the Thai Kitchen brand....no bueno.

So I made these egg rolls and OMG this recipe is legit. These are so good! The way he was eating those egg rolls at the end convinced me that they were worth a try and I’m telling you they are amazing!
Vietnamese egg rolls are the best ever. Que viet village house here in Northeast Minneapolis is unfuckwithanle in eggroll and the duck sauce is unmatched. I cry eating it. Legit tears.
