Very cool cakes! If you don’t mind could you please give me a tip for coloring the frosting such a deep color without the yucky taste of the food coloring? The other day I made an ombre blue cake and all I could taste was the food coloring, despite using Americolor gel which is supposed to give a deeper color without having to add that much coloring. Do you use black to help? Or is there another food coloring gel brand you prefer?
Try making the colour lighter than what you really want and then covering it to let the colour develop and darken by itself. For really bold colours like the blue in these cakes I used cocoa powder and black to make it darker without needing to use a LOT of gel. Flavouring like vanilla or almond or any other ingredient can also mask the taste of food colouring
