I think a lot of it is because of her family. Sounds like they're very down to Earth, never had a lot of money, or put her on any kind of pedestal. And her mother is an emergency room nurse. Speaking as the daughter of a social worker, having a parent in that kind of occupation keeps reality in check. It's not glamorous work, it's very underappreciated and it's helping people who are having an incredibly hard time while dealing with real world problems like poverty, abuse, addiction etc. A real antidote to how pretentious Hollywood can be and all the actors who are incredibly privileged and got into the industry through nepotism.
