Nintendo needs to hire this man
I feel as if Mario Kart being unrealistic and cartoony is what makes Mario kart classic, but this does look fire and I would like to see Mario kart do something like this. but, they probably won't be due to the expenses and time it takes.
There are issues when it comes to trying to make the game look realistic. It requires way more power to run and on top of that, can make the game more boring and dull.
Also, looking back at Mario over the last 15 years, there has always a consistent 3D art style that's lost when making it realistic like this.

What do you want him to do instead? Make the graphics lower quality?
There's not really much you can do to a game using blender. You can't actually remake the game, you can only remake textures, maps, and animations, but there is only so much you can do. Perhaps make it 8bit, 2D, or Anime style? But in this case he just chose to do a realistic style. Its just a choice of style not a total remake. The only way he can keep the "charm" that a lot of people talk about in these games is by just not changing the game but that wouldn't be fun to watch.
I feel like Mario would benefit from a less realistic art style and more of a cartoony art style

I don't like how you discredit the intent of the artstyle for the mario kart games. It's cool and amazing that you were able to recreate mario kart maps in a more realistic design, but mario kart's artstyle is cartoonic like that for a reason and not just for graphical or processing reasons. There's a ton of irony claiming mario kart 8 doesn't have good graphics, while simultaneously removing the vibrant style the game was intending to achieve. Remaking mario kart tracks in your own style is fun to see, but it's pretty dang ignorant putting down other artstyles especially considering the purpose of the artistic design of the mario kart maps.

The work put into the actual project is respectable, but god are some of the concepts, ideas, and script writing the most basic-bottom of the barrel structure and conceptualization possible.
Why is Minecraft there? Why are the moon and that other course literally NOTHING other than a pretty background? There's work put into this, but that work ends jo being meaningless as it misses the most important part of any project: creativity.
