the good thing about sinigang is that it is very versatile. It can be cooked using pork, beef, chicken, fish and shrimp. It can also just be vegetables. you can also put any kind of veggies you want. this dish is a rice thief and will make u eat more. good job Olya!

Sis Olya and your mother sinigang number one favorite dish of mine.
Any Filipinos has different way and presentation.
I used beef pork chicken or shrimp.
I use lots of ginger give spicy flavour as well as onion and garlic.
      About vegetable cut.
I used tomatoes and cut in tiny pieces so it will go along with tge soup or water snd make the soup or water turn to orange.
I used vegetable non traditional I didn't follow Filipino way.i use carrots celery reddish edo string pechay or bochoy okra
Which ever in demand in the market.
Okra edo or Gabi and eggplant hot jalapeno peper and string beans are the best to use .but lots of option what vegetable I will use
And of course it will not be sinigang without tamarind.real fruits or mix powder .
I you have fish sauce good flavourful than salt.
About what your mom said beauty it's means presentation how dies it look like it veggie should be half cook so the greeness of leaves look fresh except edo and eggplant it should be soft .
Beauty is different from delicious snd flavourful or tasty.
Of course I feel attractive to the food esp when it look fresh esp the colour's and you will judge it if thus dishes are delicious flavourful and nutritious

TAMARIND is a "fruit," which when when ripe is sweet and eaten as a snack. When not ripe yet, it is used as a flavorful broth base for various Filipino cuisine too. The powdered form that you used is the "raw" tamarind. SINIGANG is a staple food for Filiipinos, served in almost every Filipino home. You can make sinigang with beef bones (very delicious and flavorul), fish, chicken, etc. If you ran out of the powdered sinigang broth, you can use lots of quartered tomatoes and lemon in the broth, the sourness can be tailored to your taste. As always, good job, OLYA!!!

Your mom is full of wisdom; learned from years of experience. Filipinos like to make their dishes look colorful. They live closer to nature than people in developed countries. You see in nature (specially in the bird kingdom) the more colorful one is, the more attractive it is. Similarly, dishes that look colorful look more appetizing and enticing to eat. Just a personal observation.

Good job! For a healthier version, make sinigang with salmon. Use the salmon head to make your broth with the tamarind mix. Add salmon chunks, shrimp, and the same vegetables. Mom Ira is right! You can't dislike a recipe when you haven't cooked it, yet. 😃I love that she's honest and doesn't sugar-coat her comments to please the subscribers. 🙌

Privet pretty Olya! Sinigang is an acquired taste, due to its sour base flavor profile. At first taste, other people will be weirded out but after a few times they will already love it. It is also good on cold days if it's warm from the stove.
Tamarind is actually the fruit of its tree, we boil it and make it like a pureé, a sour concentrate processed and powdered by companies like knorr, nestle, and mama sita's for the acidic taste and for easier usage. Tamarind is also a component used in making worcestershire sauce. Brits tasted it, imported it from India and invented the sauce in Worcestershire, U.K.
    Enjoy!😊

I really like Mom Ira's commentary. She has a lot of interesting opinions on many things.
Hmmm tamarind is actually a sour fruit. I comes from the tamarind tree. In the past, we used the fruit but now, many use the powder form in cooking because it's easy. The tamarid fruit is hard to peel when it is not ripe. Good work on your sinigang, it's colorful and I can see from your Mom's reaction that you were able to balance the taste. Many people make it too sour the first time they cook it. 😍

    Yey🎉 Congratulations on 9k subscribers!🥳
Tamarind is my all-time favorite fruit! As kids we would eat the tender fresh leaves🌿 that we could reach from the ground, since their trees could grow really big and wide. They also taste pretty sour😅 Tamarind in itself is very sour and could be bitter and tart when unripe, so it is most commonly sold as candied tamarinds, with salt or sugar as coatings. But ripe, almost overripe ripe tamarinds are divine. Just a natural tart candy! It’s amazing that you were able to get tamarind spice there in Russia.❤
I love sour food and sinigang is my favorite dish. I prefer the level of sourness that makes you crumple your face 😂 sinigang can also be made with shrimps or fish, but the most common is pork sinigang. I’m sure it was a new and uncommon taste for you, but I’m glad mama Ira liked it. Sinigang is an acquired taste, some like it and some don’t. Sour soups are especially filling and delicious during cold weather. It is rainy right now so I am craving some! 😋
Mama Ira is right, just test everything and boldly and honestly say if you like it or not. I am sure that not every Filipino dish will suit your palate especially since there are a lot of new and uncommon ingredients in our dishes. I can respect our differences since we come from different cultures. And I think team CousinOlya will also understand that.
That was a very decent and solid sinigang soup you made! I saw mama Ira’s eye blink at her first taste, so I think it is properly sour😂 Thank you for another video. I hope you continue to explore our Filipino cuisine❤

OIya, what a happy happenstance because sinigang is my lunch for today! Your sinigang looked delectable with lots of vibrant colours swirling about it - although if I may say, we don't usually add celery to it. Kudos to you for another successful Filipino much-loved soup dish replication. Sinigang is very much embedded in every Filipino's heart and soul. Kudos to Mommy Irina, too. The sage judge in her is made evident because of her judicious comment. We can't truly and fully adjudge a dish without first trying it. Admittedly, I was very afraid of borscht, but when Vera (my beloved Russian friend I told you about before) served me her famous borscht, I loved it very much. The same is true with Indian cuisine for me. But when I visited New Delhi, my dearest Indian friends prepared some of their star dishes for me (less chili spices, though :)) and consequently, I fell in love with Indian cuisine. I hope Arina enjoyed her art lesson, where was funny little Ksenia. Blessings to your beautiful family! PS: Sinigang sometimes needs a second try for you to be endeared to it since it's an acquired taste due to the sour nature of the soup. Again, kudos to you, Olya. Stay wonderful!

You can also make sinigang using shrimp , fish, beef or chicken. Its a very versatile dish. When using shrimp and fish, add ginger to the broth to remove the fishy taste.
Its also better if you cook the pork or beef until very tender and the tomatoes are already incorporated into the soup.
Btw, ask andrei to buy knorr sinigang mix for you when they go to the philippines😊

I am a Filipino. I could never enjoy eating sinigang better without rice. Different Filipinos have different perceptions about eating rice. Some prefer eating rice with Japanese rice quality or texture(sticky). I prefer mine a bit drier than that. I would leave the cover slightly open when it is almost cooked while in the casserole pan.

Also tamarind is a fruit. It looks like a finger, with large seed and thin flesh. The flesh of unripe fruits is very sour and used for sinigang in the Philippines. The sinigang from fresh unripe tamarind is very labour intensive. You need to boil the tamarind, mash it, then filter it and finally added as broth. That is why, brands in the Philippines develop a way to make it into powder for convenience while cooking. The ripe ones are used in several Thai, Indian and Srilanka dishes.

sinigang also works well with salmon head. With salmon head, increase sourness so that it will work well with the fishiness of the head.

    • @rolandjrmacabata9656

with fish, don't forget to put a bit of ginger to mask a little of the fishiness.

    sinigang, our favorite comfort food!
best to pair it with rice and fish sauce with hot chili as condiment, yummy!
try beef Lauya next time. it's like beef bulalo but with a bit of sweetness and spice with ginger, cinnamon & star anise seeds.
for the condiment, fish sauce with calamansi but you may use lemon instead.

Good day Ms. Olya it's so nice you cook in your video Sinigang or sour soup it is different from Beef bulalo or broiled beef. We uses varieties for sourness like tama rind, tomato, kalamansi or lemon, unripe mango, batuan, kamias and others that has sour taste while bulalo only onion nothing to add sourness to the brought 🙋👍👏🇵🇭🇷🇺
