The real issue with sharpened knives and the dishwasher is that they don't need it, and water isn't safe for all steels and handles. It's a stupid risk when the right solution is the sink a few feet a way and half a minute of hot water - not to mention a waste of time and dishwasher space when no knife is so dirty to need one! Unlike a plate, a chef knife doesn't often get covered in dried spaghetti sauce.
The spyderco double stuff 2 with the CBN coarse side and the ceramic fine side is much more high value as far as spyderco sharpening stones are concerned. The CBN (like diamond) let's you sharpen even the s110v blurple and gray maxament knives, while having a usable ceramic hone on the back side. I also really like how they beveled and rounded the edges of the stone so you can access serrations, recurved edges, etc. Very handy little multipurpose sharpening stone when you want something pocket sized to throw in a bag or took kit.
As far as dual-sided plates go, I'm 2 for 3 with the DMT diasharp double sided stones. I have a coarse/x-coarse stone and a fine/x-fine stone that don't suffer from awful grit contamination; however, i did get a fine/x-fine stone that DID have terrible grit contamination on the x-fine side.
I have had really excellent results from dual-sided venev diamond waterstones. These are better because rather than plating single layer of diamond on a metal substrate, there is about 2mm of a diamond-impregnated matrix. The matrix is then bonded to a center plate. In this case, since the two grit sizes are formed separately, there isn't a problem with cross-contamination. These venev diamond stones really cut rapidly and leave much more refined edges than you'd expected from their grit rating and cutting speed. I think they really are the best sharpening stones I've ever used.
I recently got the hapstone premium metallic bonded cbn stones and they're pretty good stuff as well
Jsyk, do NOT get the Venev resin-bonded CBN stones. They have absolutely terrible QC.

I think I want to disagree between diamond and CBN just to meet you! Thanks for the video, I love this new format and everything you’re doing. It’s really helping me understand really, what happens instead of all the hocum and crazy behind-the-scenes magic that you typically get from people when they tell you how great something is for sharpening. When they really mean, it’s really great for the exact situation they are using it for in the exact way they are using it, and they lead you Intentionally or not in the wrong direction

Last year I bought a Spyderco fine, double-sided stone that I think they discontinued. I think you reviewed it some time back and I happened to snag one before they were dropped from Amazon and it's worked for me so much so that I don't bother with my composite stones anymore. They're too messy and always need flattening, which is a pain.

I think the best "dual side dual grit" plates. Are if you buy an Atoma plate, and an Atoma replacement sheet in a different grit and put the replacement sheet on the back of the clean Aluminium plate.

Hey Alex! Love the channel, it got into my youtube algorithm a few weeks ago and I've learnt a lot. Recently I ordered that cheap 400/1000 diamond stone you mention in this video, but Amazon screwed up and I got a set of 400/600/800/1000/1200 plates instead. At first I thought I was in luck, more grit sizes and none of the grit contamination! But obviously these plates are fairly thin and don't have any "weight" to them at all. Do they stay straight? Would love to hear your thoughts on this.

Thanks for that video. Along the same exact line, would you mind doing a video on the DMT 1200 mesh stone, the Extra Fine Green? I bought one years ago and it felt like it was a lot coarser than a slightly worn in 600 mesh fine. Grit contamination, I do believe. I sent the stone back to DMT and they replaced it, only to have the same issue. Grit contamination. This is after a break in period. The stones I am referencing are the DiaSharp line, not the DuoSharp. I don't think it matters, but just for clarification. If there is a way you can get your hands on a 1200 mesh 8" DiaSharp DMT stone, I would love your opinion, and the microscope shots, to back it up. Even the DMT Extra Extra fine, their 3 micron stone, feels a lot coarser than 3 micron, and like you mentioned in another video, I don't really care for that stone either. It feels weird. I guess there is difficulty making finer and finer diamond plates. The coarse stones work great. The 600 mesh Fine stone is excellent. I feel problems start with the 1200 EF. However, the Atoma 1200 is amazing.
Could be worth another look into the STSC diamond double sided stone. Got one recently and I think they have greatly improved the fine side since you got yours.
I find the scratch pattern easily finer than the coarse.
They have now put a silly plastic frame around it mind but it didn’t cause any issue

Can you demo how to sharpen a recurve or even kukri style blade on a DMT diamond stone? I have difficulty on the inside curves.
Any advice/tips for sharpening a convex blade (e.g. Fallkniven)? Or would you just reprofile to a flat grind?
You should review the fallkniven dc4 its a ceramic/diamond stone that’s fairly cheap.
Hi. New subscriber here. I was wondering what sort of microscope you're using for your closeups of the cutting edges and stone surfaces. I've got regular tabletop microscope like a person would use to view microbes on glass slides, but of course, those offer little in the way of depth. It essentially only focuses on a very thin 2-dimensional slice of whatever your viewing. Not much use when looking at the cutting edge of a knife.
I would like to see a close up of a knife that is laser sharpened. I worked with a guy that had a knife that was done and it seemed good to me. I am curious how smooth it would be and if the heat adversely affected the metal.
Wonder whether the DMT duosharp fine/course might be a good alternative as well. Believe each side is manufactured separately and then laminated to the plastic core, and so shouldn't be any opportunity for contamination. Not that it saves you a bunch of money, still about $100, but it does come with a nice base.

what do you think of the falkniven DC521 benchstone? That in combination with a strop is my 'lazy' Sharpening process.
When I want to get fancy I have the shapton G7 glass stone kit, I picked up the extra 1500 and 5000 G7's since the kit has big jumps between grits. The kit has a stand and a diamond flattening stone. So the process is 600, 1500, 2500, Strop, 5000, and then 30,000. The kit was about the same price as a single glass 30,000 stone.
I like the Spyderco extra fine ceramic stone. For deburring it is excellent as you can feel the burr tear off.

I would expect better from SPYDERCO as I own a ceramic stone from SPYDERCO and it is very good no issues with it at all. Clearly they have dropped the standards with this one. Great work on the review of this stone.

Have you tried the coarser grit diamond compounds on a strop? I see there’s a 400 grit diamond compound available. Would that be able to rebevel an edge without creating a burr? Maybe if it was embedded in a wax base? Then we could skip the finer strop.

Unrelated question, but this seems to be the perfect place to ask it.
I just sharpened my Gyuto kitchen knife on a shapton 1k, did the forward strokes, 10 each side, alternating, to remove the burr. Stropped on some green compound.
It is quite scary sharp, but shaving arm hair works much better when i hold it in my left hand. Hair is just jumping off. When holding it in the right hand and shaving my left arm it kinda works, but not nearly as nice as the other way around.
Is this a burr issue?
Help! How do I sharpen a long brisket blade? Rather, is it possible to use a Shapton 1000 stone? It just doesn't seem wide enough. I'm guessing I shouldn't sharpen the blade in pieces or it won't line up?
I have the dual sided DMT stones & they are the same way. The coarse/ extra coarse is fine but the fine/extra fine definitely has contamination on the extra fine side, like larger micron than the fine side...?
Does this apply to single sided DMT plates? I have 4 of the 8x3...
i got a quick question for you: Do you think grit contamination can happen on one order of the stone but not another? Such as a "batch" of them are contaminated?
SSATC appears to be the same as some of the stones from other brands on Amazon, and the SSATC's delivery date is fairly far out (not through Prime). I would be interested in seeing a comparison between it and one of the identical-appearing brands (the one that shows up most easily right now is a company called Jewboer, which offers a 4 or 5 piece set of diamond stones for ~20 dollars, which appears to have the same hexagonal layout and font on the grit marker). As an update to my last comment about the DMT duo-sharp 2-sided thing I bought... it seems to cut differently going towards the sticker than it does going away from it. Are these things in fact directional? Did I damage my stone somehow (bending the steel mesh on which the abrasive is applied)? In line with your advice from this video, I think I'm just going to stick to the coarse side of thig, assuming I don't just replace it with something more normal.
I have just bought ssatc the first time ice used it I can't get it to whittl free hair but I can kind of get it to whittle while the hair is against my finger but only like 1/8 to a 16th long then it stops. Is it because it's not been broke in?

There are a couple of sharpening channels I watch consistently. Japanese Knife Imports is great on the process of freehand sharpening kitchen knives. But this guy rules when it comes to all the other stuff. And he's so likeable too.

So what causes a stone to be grit or not grit contaminated? What makes it susceptible to contamination? How does it resist contamination? Any way to clean it?
A couple of years ago I bought the Spyderco Golden Stone sharpener (the one that looks like a duck foot). I had bad results sharpening my knives as the blade kept on getting caught on one part of the stone. I ended up buying a cheap diamond plate to grind down the Spyderco stone which revealed a very wavy surface with a couple of nubs right in the middle of the sharpening flat (on both sides). The seams on the edges also stood proud of the flats until I ground them down. I think Spyderco needs to source from better vendors or do some QC to make sure the other products sold under their brand are as good as the knives they sell.
Atoma is really good for the money to, very consistent. I only own a handful of epoxy bond stones but it kinda seems like for me anyhow I'm going through a regular diamond stone every 6 months but I do a lot of sharpening so I'm slowly replacing my grits with epoxy bonded
The husky dual sided stone seems to be ok, on the fine side. But i think its because its two separate plates attached to a plastic base thing.
I just got it at home depot because it was cheap, and figured it was worth a shot. And really its not bad.

I've had slightly better finishing/polishing with CBN compounds but just barely.
In your last video you told us you can get crazy sharp with a coarse stone and a strop.
So why bother with fine stones then? What's the benefit of a refined edge?
It depends on what you are cutting. Coarse edges don't work well for everybody. Shaving for instance isn't very comfortable with a 400 grit edge 🙂
Why wasn’t your recommendation for a second stone the Shapton 1000 instead of the DMT fine?
I just went to get the s satc diamond stone you've mentioned before, and it's currently unavailable. Do you, by chance, have another stone like that you can recommend?
I researched the heck outta systems before settling on the $90 Spyderco sharpmaker with CBN rods. I can't get a good edge on anything and it absolutely destroys the point on every blade you run through it. It also has some defects/bumps on the surface that will blunt your edge. The plastic holder also broke on the very first use of the system now I can't use the scissor sharpening part of it. Oh, and it loads up and clogs so fast I can barely get through one knife before it clogs.
Before the sharpmaker I always just freehanded on cheap Norton stones and got way better results.

@@DanialY-qm6xt I'm definitely open to that possibility (I also wonder if I might have gotten a knockoff). I watched the sharpmaker video like 4 times before even buying the thing.
I tried using the lower angle slots first to reduce the shoulders or give it a secondary bevel or whatever they called it... Didn't really help. The most success I've had with it is freehanding with the rod but that's really unsafe. I've also noticed I get a better edge if, instead of keeping the blade 90 degrees to the ground, I rotate the blade a few degrees away from the rod (thus increasing the angle above 20 degrees)
What plated stones do you prefer? I've heard especially negative things about DMT's stones, especially when you get to the finer grits.

Question.. so I collect knives.. I have my whole life. (Yes, I barely use them.) Just recently got back into it. Sharpening is something I just haven't got down yet.. and I'm a bit scared to do it with knives in my collection. I bought a cheap whet stone set, then a worksharp guided FS, also a Falkniven d4 for travel. What would be the best way for me to practice hand Sharpening? Should I just use a dirt cheap kitchen knife? Or actually get a decent blade practice on? Something to sharpen, beat up, then sharpen again solely just to practice. As is, I can get a cutting edge on a blade.. but I'd like to be able to get a (comfortable) shaving sharp edge. Like scary sharp.. is my goal.

Hello. What stones are best to use for real vg10 steel (Japanese, not Chinese) ? Cheap stones and expensive ones
VG10 is only made in Japan. Steel composition, edge geometry, and heat treat are way more important than the origin of the steel. It should be pretty easy to sharpen VG10, so any quality stone would work. Naniwa and Shapton are both fantastic manufacturers, I'd try one of them.
For chef's knives, is there a point in going over 400?
I've read that CBN might be good for lapping stones to flatten dished out whetstones? Or should I just stick with diamond for that purpose?

I think this is a good bit of criticism. It would be cool if Spyderco kept improving their abrasives like this plate.
I have one and will say that it wasn’t perfect, but it does work for my really toothy edges.
I notice a little bit of a difference between the two sides in use, but I would prefer their finer CBN grit to be a tad more fine.
Their other CBN offerings are very unique and useful, though.
Stand out more from the competition.
I would really like to see your explaination or facts on all of the diamond and cbn types of products. Their differences in terms of particular effectivness as well as durability. And why. Oh! I forgot the actual cutting feel of each product. Whether the apex is perfect and burr completdly removed. On all of the various metals that you have so exoertly examined.
There's really not much to go over to be honest. Its not that complicated of a topic. For freehand sharpening there no difference other than the difference grits which should be pretty obvious. Plating quality and grit consistency is the most important. There are different types of diamond as well polycrystalline vs monocrystalline. But it can be very difficult for the average user to tell a difference without already knowing what they are using.
Are you telling me that the ultimate durability of the abrasive is not really evident, to most sharpeners.
I would have to disagree with your evaluation.
In terms of the plating degree of quality would be very important as well as concentration level.
This is why all metal played abrasives have a very low level of long term effectiveness. Should never be part of a semi professional or professional work place. ALL ARE VERY POOR FOR Consistent Quality function and well as consistent durability.
@abrahamkalichman6845 knife sharpening is not a machine shop. Plated stones are fine because of the lack of high speed or heat. It'll wear orders of magnitude more slowly than when they're used for machining.
Sorry to inform you, but there are more efficient ways to use quality diamonds than a metal plate as a base.
First, is that the mono diamond that is used in these plates are very poor in effectiveness vs a poly diamond. The action of the blade across the diamond plate lops off the diamond particles similar to a sheet of sandpaper. Making the plate very poor in its effectiveness.
There are other methods that will accept all quality diamonds for a better effective and durable solution.
Paste is obvious, as well as emulsions .I'm sure there are slurries as well. This has nothing to do with high speed machining.
poly diamond is much more effective but is weak as a body.
Mono diamond is stronger but less effective. Especially when it is broken off on every stroke, where the diamonds are adhered to the bed of the plate, without movement. So

So what stones would you reccomend for maxamet, s110v and s90v? i was looking into the shapton glass or rockstar stones but i dont find much reviews of those stones on these steels.
Shapton glass uses, I believe, silicon carbide abrasive, which despite being harder than aluminum oxide is still relatively soft compared to CBN and diamond. It will work for S110V, but it'll be slower.
You'll want a plated diamond/CBN stone (DMT is pretty good for coarse grits, avoid their extra fine stones), especially for the coarse reprofiling. I start with that and move to a resin-bonded diamond/CBN stone (Venev, Naniwa, Columbia Gorge Stoneworks, Poltava) for the finer polishing grits. Coated diamonds are more aggressive than bonded so they're better for reprofiling whereas bonded stones are better for polishing.
I really like CGSW because it provides an excellent finish compared to Venev. CGSW's 5 micron stone polishes better and much more consistently than Venev's 1 micron stone. Venevs do seem to wear more slowly, but either will last a long time when properly used and maintained. Naniwa's diamond stones are REALLY expensive so I'm hesitant to risk spending $200 on one, but they do have good reviews. Stay away from Venev's CBN stones at all costs. Extremely expensive and for whatever reason seem to have bad QC.
So maybe start with a coarse DMT and then a ~20 micron resin bonded stone. You can start to fill them in as needed depending on your personal needs. Don't forget to get a good strop with high quality diamond/CBN stropping compound such as Gunny Juice or KME. You don't need to buy the full range of compounds, even a bottle of 9 micron Gunny Juice makes a huge difference. And less is more, you don't need a whole lot on the strop.

I had never heard of some of the brands you had mentioned, I have a small DMT sharpening kit, im looking to get 2-4 stones for sharpening. Their is so much to read it makes it difficult to make a decision. especially since some of these stones are 200-400 dollars a stone and i cant afford that currently. Thanks for saving us money. Was on the fence about this one, as I really love their ceramic stones. But now I am even more confused. About 10 years or more ago, there were so-called cbn sharpening stones sold at gun and knife shows. They looked like dark black colored aluminum oxide stones, but they stunk to high heaven, and they were very oily. I had a couple labeled under the gun name Winchester. Boy, did they aggressively sharpen fast. They smelled like a tire yard fire. And they were very heavy for their size. They were not metal plates. The package said made in Japan on it. I got talked into swapping them with another maker, collector, restorer. I have never seen another one. I know Smoky Mountain Knofe Works sold them. Wonder if anyone knows anything about those? Mine were about 3 " by 2" by maybe 1/2 inch thick. It never listed a grit rating. Felt smooth, but super aggressive.

@OUTDOORS55 Alex, I found the info! I remembered the gun company wrong. It was Colt. The name of it was Colt C-BNX7, cubic boron nitride sharpening stone. Size was 4" × 2" × 1/2". It was not a bonded metal plate. Amazon still has a picture of one up with the specs. It had about 5 reviews or so, by people saying it was the best stone they ever used. Just needed a bigger one. One review I read was from 2016, if I remember correct. I could not find one for sale on either ebay or amazon. If I did, I was going to try and email you the link. There may still be one out there. I remember my blister packs they came in were bright blue. I agree. They were too small, and really smelly, but one of the best pocket stones I ever owned. I bet the knife forums discuss these. I'm gonna check them myself.
