Ingredients (for 12 pieces):
1 egg (size L)
2 egg yolks (size L)
120g sugar
2 tbsp corn starch (cornstarch)
400ml whole milk
1 roll of ready-to-bake puff pastry from the refrigerated shelf
aside from that:
Powdered sugar and cinnamon for sprinkling (optional)
First prepare the pudding filling.
1) mix the egg, egg yolks, sugar and starch in a saucepan using a whisk. Gradually add the milk and mix until smooth.
2) Place the pot on the stove and heat over a medium temperature, stirring constantly, until the mixture thickens like pudding and bubbles. Then immediately pour into a glass bowl and cover with cling film to prevent the pudding from forming.
3) Take the puff pastry out of the fridge and let it come to room temperature slightly (takes about 10 minutes). But don't unroll it yet, otherwise it will break easily.
4) Preheat the oven to minimum 200°C top and bottom heat.
Lightly grease the cavities of a muffin tin.
5) Unwrap the puff pastry. Then cut halfway along the long side so that you get two pieces of dough of the same size. Now place these precisely on top of each other and roll them up very tightly from the short side.
6) Using a sharp knife, cut the resulting roll of dough into 12 equal slices. Then place each piece of dough in front of you so that the spiraled shape is facing upwards.
Flatten with the heel of your hand or a large glass base so that the whole thing is slightly larger in diameter than the muffin cavities. Then place the resulting disc of dough into the muffin tin so that the edge of the tin is also covered. Do the same with the remaining pieces of dough.
7) Fill each with pudding (the natas should not be overfilled beyond the edge of the dough) and place the muffin tin in the oven for approx. 22-25 minutes. The pudding tarts should brown a little on top.
8) Sprinkle with cinnamon and powdered sugar and enjoy with a good coffee or milk.
