Seafood paella recipe (adding this here so I can come back to it) Ingredients 1/2 l water with safron Paprika Garlic Peppers Crushed chillies Fish masala Salt Onion Mixed seafood Method: Heat oil in pan, add in sliced onion and fresh/crushed chillies (according to taste) Add 4x chopped garlic cloves. Fry for a few mins then add salt and black pepper to taste. Add in sliced peppers (can be a mix of rainbow peppers) Add two tablespoon of smoked paprika and masala. Add a little bit of water. Allow to cook Add 2 cups of washed and soaked rice. Then add in safron water. Allow to cook for 5-7 mins (If using fresh mussels, clean them and ensure they are opened a bit, if not discard them) Add mussels on top of rice(if more water is needed, add more) Add prawns and calamari Allow to steam through on medium heat for 10 mins (do not over cook) Top with fresh dhania and lemon wedges/cheeks

That Paella looks delicious, very nice. I make several Biryanis and have been wanting to make Paella, but we didn't have the Spanish rice in the pantry. But now I will try your recipe with normal basmati. Thanks for sharing and will get your book soon.

I am confused; when you showed the mussels you mentioned that they must be opened. Surely a mussel should be closed before being cooked so that it opens as it gets cooked? Did you put open or closed mussels in the dish? Getting ill from ‘verkeerde mossels’ can put you off mussels for the rest of your life so please clear this. TI A
