  • Sourdough Cinnamon Raisin Bagels
    Double Batch- Yields 15 Bagels
    200-250g starter
    20g salt
    80g honey
    10g cocoa powder
    10g cinnamon
    1,000g bread flour
    200g raisins
    Add all to stand mixer and mix until dough pulls off sides of the bowl
    Rest covered for 6-8 hours
    Divide dough into 15 balls, should be around 138g per
    Push hole and shape into bagel
    Rest for 1-2 hours
    Boil Water- add 1 TBS of baking soda to water and 10g of honey
    Boil bagels 30 sec per side
    Bake bagels @375 degrees for 25 minutes
    Cool and enjoy 😊
