Local butcher sold me a petite as a "less fatty, still tender" steak for my girlfriend who isnt fond of fatty steaks like ribeyes (gasp). She likes them better than strips now. Very tender and take seasoning well. Saves me money on her steak so I can buy the bigger ribeye for me👍

That happens more than people would think grew up in a house where everything has been over cooked so they think that's how it should be cooked , they'll be like that steaks tough well no 💩 you over cooked it and if you watch they do the same thing with almost everything they cook.
I actually pay less than €10/kg for hanger (NL: longhaas), probably about €14/kg for petit tender (NL: jodenhaas). The difference in colour, as far as I know, is because the hanger has seen a lot more blood perfusion because it is a worker muscle whereas the petit tender is a `lazy` muscle that is rarely used. Because of this the bite of the petit tender very much resembles that of much more expensive cuts up to chateaubriand. Should also say that I tend to take a bit more time cleaning the hanger steak, aiming to leave no flesh on that centre membrane. Then again, my waste bucket is also a lot less cuddly than yours.

And you are right, when feeding the masses, go for value for money. I'm just the same. I bought steaks that cost 135-150 € per kilo, but that's only when I bbq for my own family. Trick is to use "cheaper" steaks or any meat and prepare it so that it tastes like a high end steak... BBQ is kinda like magic 🤘
The petite tender is excellent, less than half the price per pound of a tenderloin (where I live) but probably 75% as tender if not moreso. Just make sure you take that silverskin off.

As someone who always is the grillmeister when the guys are having a BBQ, this is so true. Even with chicken, sometimes they'll just be like, "That's done, I can eat that." While not even being close to done.
It’s about appetizers and sides! Get that potato salad and deviled eggs out early! Throw some shishkebabs on first and have that come out before the steaks or something. Turns the experience into a fine restaurant where you get like five things over an hour, with the best flavors held to the end 🤤 🍻
There are a couple of markets by me that sell non-graded family pack steaks: ribeye and flat-iron for 5.99-6.99/lb if you pick out some with good marbling and dry-brine it overnight (maybe eve hit it with some mayonnaise/mustard) you can feed a crowd inexpensively. If it doesn't come out too well, you can always blame the sale special. Plus, let's not forget, food always tastes better when you're together with friends and family.
I'm really happy you made a hanging tender/hanger steak, also called butcher steak. This cut isn't really well known but I love it for its strong taste a texture. They say the cut is less known because butchers used to keep it for themself, its not the best looking part of the animal and its relatively small muscle afterall. Funny fact: In Czech Republic this cut is called "veverka", which literally means "squirrel".
Great video! For me I would ask how often are you eating steak. If you are only eating steak once in a while then definitely go for the better grade and better quality beef. If you eat steak on a regular basis then going with these lesser known cuts makes it more affordable and gives you a different flavor and texture everytime you eat it.
Or use those pieces for tacos, fajitas, pepper steak and rice 🍚, stir fry make it into jerky to name a few thing's to do with the trimmings and extra pieces .

I do love your show.. you have given me some delightful ways to cook my meat.. and I thank you for it.. however it is not just the cost but the age of the cow and the cuts.. When they take an old milk cow that has run her time and butcher her and sell the meat as prime cuts. Or a bull that in on his last legs and do the same.. Well you get tough steak that I have to have a better set of teeth to eat it with.. and they still get good money from terrible meat.. and then there are the cows it comes from.. a nice angus compared with a tough Texas long horn.. well, that in and of it's self is a very great difference in the quality of the meat. One is melt in your mouth goodness the other is like eating a warm rubber band.. Thanks for all the grand tips and trick you have shown me.. Carry on! I do appreciate all your hard work.
I love the channel and watch every episode but I live in Texas and there’s no such thing in my area as a local butcher so I’ve never heard of these cuts and definitely have never seen them in the local grocery store, would be nice though
You can always order high quality meat from several different websites. Crowdcow, wildfork, grandwesternsteaks. They deliver top quality steaks anywhere in the US.

If you live in the country you might be able to buy directly from a rancher. If you are in a city you could probably find a good supplier if you talk to your local steakhouse and find where they buy their meat.

You know Roel likes his wagyu ;) T-bone (or I-bone) from a less fancy cow goes for around €25/kg in NL, Cote a l'os (bone in ribeye, without the tomahawk handle) can be found for €18/kg. You do really need to go to an actual butcher for these prices though - the larger supermarkets will add at least €10/kg to these prices because they can't sell these in large volumes.
I just need to find another good butcher that knows meat! We are moving to a new location 300 km away. My first priority will be finding a good butcher.

The price has doubled and it’s garbage meat, no matter how you cook it it’s just tough and it tastes OK but you might as well just grind it up and to hamburger or buy some ground Chuck because it’s gonna taste as good and be edible without damaging your teeth and wearing out your job trying to get it small enough to swallow. Lol. I never even heard of the hanging tender come up next time I’m at any store with the butcher I’m going to see if I can get it. This is a great option. That little medallion shaped part of the hanging tender that you gave to the dog before you cooked it I think would’ve made a pretty decent steak as well and it looks like it had some really good fat in it. Lol. I would’ve cooked that too. Lol

Depends. If it's Japanese Wagyu A5, it's cheap. If it's just premium grade, it's not so cheap. If it was part of some old diary cow, consider it super expensive ;)

Chuck eye steak is my go to cheap steak.
Used to get 'em for $3-4 a lb, unfortunately the secret is out.
Ask your butcher for “chuck eye “ steaks. More tender than a ribeye, plenty of marbling, super tasty, half the price of a ribeye.
I think some of the stores in my area are catching on to this and raising the cost of the chuck eye, but it is an excellent steak!!
